This Chocolate Peanut Butter Chia Pudding is sweet and creamy. Make it with maple syrup or stevia to keep it sugar-free.
Chia seeds are nutritional powerhouses. They're high in fiber and omega-3s. They also contain a decent amount of calcium and magnesium, which have both been on my radar since my ankle fracture a while back.
If you have never had chia seeds before, this is a great recipe to try them for the first time. Chia seeds become gelatinous when you add liquid to them. They make a wonderful pudding, jam, or substitute for eggs in baked goods.
Chia pudding is incredibly versatile. Since the seeds don't have a lot of flavor, they take on the flavors you add to them. Soak them in coconut milk and add a little vanilla extract for a rich coconut flavor.
Add some tropical fruit for a Tropical Chia Pudding. Add some cacao and spices for a Mexican Chocolate Chia Pudding.

- Almond milk: I used unsweetened almond milk because I like to control the sweetness. You could use sweetened almond milk, soy milk, oat milk, or your favorite dairy-free milk.
- Maple syrup: Adds sweetness. You could also use agave syrup, dates, or your favorite sweetener.
- Cacao powder: Adds chocolate flavor. You could also use cocoa powder.
- Vanilla Extract: Enhances flavors.
- Almond extract: Adds a fruity flavor. You could leave it out.
- Salt: Enhances sweetness. I like to use sea salt.

Chocolate layer: Mix chia seeds and almond milk in a small bowl. Let sit for at least an hour to get gelatinous.
Add mixture to a high-speed blender or Nutribullet. Add the rest of the ingredients and blend until smooth and creamy.

- Blending it in a blender gives it a smoother texture, like traditional pudding.
- For the chia pudding texture, just mix it well with a spoon. Taste it to see how you like it. If the texture isn't to your liking, blend it.
- You could also blend the two layers together if you want to eat it that way.

Had to double the cocoa powder and add more maple syrup and peanut butter to get any flavour but after that it tasted great and was less bitter and starchy. This will probably be a keeper recipe but used as more of a healthy-ish dessert for the kids.
I definitely recommend halving the almond extract as it is a little overwhelming and made everything taste like marzipan.
I would also add a layer of bananas, chocolate shavings, some coconut whipped cream and a drizzle of peanut butter on top!
Some fresh halved cherries, strawberries or raspberries would also go well with this.
Fresh whole strawberries and pineapple spears would be excellent dipped into the chocolate pudding especially if blended until smooth and warm.

I always forget about chia seeds! I love making smoothies and have put them in smoothies, but since we moved last year I haven't bought more chia seeds. Not sure why, just think it was the craziness of buying a home after years of renting and little things just slipped out of my mind (or it could be age but we won't talk about that haha!)

Used coconut milk instead of almond. The peanut butter pudding was great but I had to melt chocolate chips and add to the chocolate pudding because it had no taste, .maybe because I used organic cocoa.
