This Chocolate Peanut Butter Chia Pudding is so healthy, it can be eaten anytime of the day!
After breaking my ankle awhile back, chia seeds have become a daily part of my diet. I've always kept them in my pantry, but now I include them in my daily smoothie.
They are nutritional powerhouses. They're high in fiber and omega 3s. They also contain a decent amount of calcium and magnesium, which have both been on my radar since my fracture.
Making a Chocolate Peanut Butter Chia Pudding was a no-brainer since it is one of my favorite flavor combinations. A dark chocolate bar with peanut butter spread on top or chocolate chips mixed into peanut butter and eaten by the spoonful is the way I roll with desserts.
I don't like anything that's too sweet as a norm, so the combination of sweet dark chocolate with savory peanut butter hits the spot.

If you have never had chia seeds before, this is a great recipe to try them for the first time. Chia seeds become gelatinous when you add liquid to them. They make a wonderful pudding, jam, or substitute for eggs in baked goods.
If this is your first time trying chia pudding you'll definitely want to blend the pudding in a high speed blender or Nutribullet to get the creamy consistency you're used to in a pudding.
You can make it without blending also, but for some people it takes some getting used the texture.
Chia pudding is so healthy it can be eaten anytime of the day. Even when chia pudding has sweetener, the sweetener goes into your system slower because of the protein and fiber.
Chia pudding is incredibly versatile. Since the seeds don't have a lot of flavor, they take on the flavors you add to them. Soak them in coconut milk and add a little vanilla extract for a rich coconut flavor.
Add some tropical fruit for a Tropical Chia Pudding. Add some cacao and spices for a Mexican Chocolate Chia Pudding.

Chocolate Peanut Butter Chia Pudding
Ingredients
Chocolate Chia Pudding
- ¼ cup chia seeds
- 1 cup unsweetened almond milk
- 1 tablespoon maple syrup or 15-20 drops stevia
- 2 tablespoons cacao powder or cocoa powder
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- Pinch salt
Peanut Butter Chia Pudding
- ¼ cup chia seeds
- 1 cup unsweetened almond milk
- 1 tablespoon maple syrup or 15-20 drops stevia
- ½ cup peanut butter
- 1 teaspoon vanilla extract
- Pinch salt
Instructions
- Chocolate Chia Pudding: Mix chia seeds and almond milk. Let sit for at least an hour in the fridge. Add the rest of chocolate chia pudding ingredients. Mix in a high speed blender or Nutribullet.
- Peanut Butter Chia Pudding: Mix chia seeds and almond milk. Let sit for at least an hour in the fridge. Add the rest of peanut butter chia pudding ingredients. Mix in a high speed blender or Nutribullet.
- Layer chocolate chia pudding and peanut butter chia pudding in bowls and serve.

Had to double the cocoa powder and add more maple syrup and peanut butter to get any flavour but after that it tasted great and was less bitter and starchy. This will probably be a keeper recipe but used as more of a healthy-ish dessert for the kids.
I definitely recommend halving the almond extract as it is a little overwhelming and made everything taste like marzipan.
I would also add a layer of bananas, chocolate shavings, some coconut whipped cream and a drizzle of peanut butter on top!
Some fresh halved cherries, strawberries or raspberries would also go well with this.
Fresh whole strawberries and pineapple spears would be excellent dipped into the chocolate pudding especially if blended until smooth and warm.

I always forget about chia seeds! I love making smoothies and have put them in smoothies, but since we moved last year I haven't bought more chia seeds. Not sure why, just think it was the craziness of buying a home after years of renting and little things just slipped out of my mind (or it could be age but we won't talk about that haha!)

Used coconut milk instead of almond. The peanut butter pudding was great but I had to melt chocolate chips and add to the chocolate pudding because it had no taste, .maybe because I used organic cocoa.
