    Eat this Vegan Rice Pudding for dessert or as an alternative to porridge for breakfast. It's made in under 30 minutes and is simple and easy to make.

    Made with maple syrup and spices, it's not too sweet. It's a great way to use leftover rice.

    🧾 Ingredients

    • Cooked rice: I used cooked jasmine rice. You could use your favorite rice.
    • Soy milk: I used soy milk because that's what I happened to have on hand, but you could use oat milk or any non-dairy milk you like.
    • Maple syrup: To add sweetness. You could also use sugar, brown sugar, or agave syrup.
    • Vegan butter: Adds a rich creamy flavor.
    • Vanilla extract: Enhances flavors.
    • Cinnamon and nutmeg: Add a warm flavor.
    • Salt: Enhances sweetness.

    🔪 Instructions

    Soy milk, vegan butter, and cooked rice in a saucepan.

    Step 1: Add cooked rice, soy milk, and vegan butter to a saucepan. Bring to a boil, then reduce heat to medium-low.

    Step 2: Add maple syrup, vanilla extract, and spices.

    Ingredients

    • 1 ½ cups cooked rice - I used Jasmine
    • 1 ½ cups soy milk
    • 1 tablespoon vegan butter
    • 3 tablespoons maple syrup
    • 1 teaspoon vanilla extract
    • ½ teaspoon salt
    • ½ teaspoon cinnamon - I used Ceylon cinnamon
    • ¼ teaspoon nutmeg

    Instructions

    • Add cooked rice, soy milk, and vegan butter to a saucepan. Bring to a boil, stirring. Reduce heat to medium-low.
    • Add maple syrup, vanilla extract, and spices. Cook 15 minutes, until rice is softened and the liquid is absorbed.
