    This Vegan Mug Brownie is sweet, rich, and fudgy. Made in one bowl, it takes only a few minutes from start to finish.

    This Vegan Mug Brownie is sweet, rich, and chewy. If you are into cakey brownies, sorry this recipe is not for you.

    If you love your brownies fudgy and chocolaty, you'll love this recipe!

    Done in a few minutes, this recipe is perfect for those days you want something sweet, but don't want to turn the oven on.

    You can also add the batter to silicone molds and freeze for later.

    • Made with pantry staples in just a few minutes, you'll be enjoying it in no time!
    • It's simple and easy to make. You could even have the batter ready to go in single serving silicone molds in the freezer for when a sugar craving hits. (That's what I did.)
    • It's fudgy and chewy - exactly what a baked brownie tastes like. (If you prefer the fudgy variety.)

    🧾 Ingredients

    • Cacao powder (or cocoa powder): Adds the chocolaty flavor.
    • Gluten free 1:1 baking flour: I used Bob's Red Mill. You could use your favorite gluten-free flour blend. As long as it is a 1:1 baking flour, it should produce good results.
    • Sugar: I used cane sugar. You can also use brown sugar.
    • Vanilla extract: Enhance flavors.
    • Salt: Balances the sweetness. I like to use sea salt.
    • Soy milk: You could use any dairy-free milk.
    • Coconut oil: Adds moisture and helps bind the ingredients.
    • Chocolate chips: Optional, but recommended. I used dark chocolate chips.

    🔪 Instructions

    Dry ingredients in a bowl.

    Step 1: Add dry ingredients to a microwave safe dish.

    Step 2: Whisk until combined.

    Bowl with wet ingredients added and mixed into the dry ingredients.

    Step 3: Add wet ingredient except the coconut oil. Mix, then add the coconut oil. (Adding the coconut oil last is to prevent the ingredients from hardening due to the cold temperature of the soy milk.)

    Step 4: Add chocolate chips. Fold into the batter.

    Step 5: Microwave at 30 second intervals. I microwaved mine for 50 seconds, but yours may vary due to the microwave.

    How long does it take to make a mug brownie?

    About 5 minutes from art to finish. It only takes 50 seconds to heat up.

    How to top a mug brownie?

    You could top it with vegan ice cream, whipped coconut cream, caramel sauce, or berries. You could also add in some chopped walnuts or pecans for some crunch.

    Ingredients

    • 3 tablespoons cacao powder or cocoa powder
    • 2 tablespoons gluten free 1:1 baking flour - I used Bob's Red Mill
    • 3 tablespoons sugar
    • ¼ teaspoon salt
    • 2 tablespoons soy milk
    • ½ teaspoon vanilla extract
    • 1 tablespoon coconut oil
    • 2 tablespoons dark chocolate chips

    Instructions

    • Add dry ingredients to a microwave safe mug or ramekin. Whisk.
    • Add soy milk and vanilla extract. Mix.
    • Add coconut oil. Mix.
    • Add chocolate chips. Fold into batter.
    • Microwave at 30 second intervals. I microwaved mine at 50 seconds, but your microwave may differ.

    Notes

    If you want to have some ready to go for later, pour the batter into single serving silicone molds and place in the freezer.
    Then scoop out the individual portion into a microwave safe mug and cook as normal.
