It's made in one bowl and couldn't be any easier! You can even use a frozen zucchini. I had one I needed to use up and it worked no problem.

- Vegan butter: I used salted Melt Organic plant-based butter because that is the only vegan butter my grocery store had in stock. You could use your favorite vegan butter.
- Granulated sugar: You may want to check brands that are vegan. I used vegan cane sugar from Costco. Wholesome makes vegan organic cane sugar. There are other brands that have vegan sugar as well.
- Zucchinis: You can a fresh or frozen zucchini. I made it both ways.
- Gluten-free 1:1 baking flour: I used Bob's Red Mill. You could use your favorite gluten-free flour blend. As long as it is a 1:1 baking flour, it should produce good results.
- Cacao powder (or cocoa powder): Adds chocolate flavor.
- Baking soda: Allows the bread to rise.
- Salt: Enhances sweetness and balances flavors. I like to use sea salt.
- Cinnamon and nutmeg: Add a warm spice flavor.
- Vanilla extract: Enhances flavors.
- Chocolate chips: Adds more chocolate flavor.

🔪 Instructions

Step 1: On a box grater, grate the zucchinis. Set aside.
Step 2: In a large mixing bowl, add room temperature vegan butter and sugar. With a handheld or stand mixer, cream vegan butter and sugar.
Step 3: Add grated zucchinis and vanilla extract. Mix with a spoon.
Step 4: Add the dry ingredients.

Step 5: Mix with a spoon until combined.
Step 6: Fold in chocolate chips.
Step 7: Pour the batter into a greased loaf pan.
Step 8: Bake until a toothpick comes out clean, about 50 minutes.

Vegan Chocolate Zucchini Bread
Equipment
- Hand mixer, or stand mixer
Ingredients
- ½ cup vegan butter softened to room temperature
- ½ cup sugar
- 1 ½ cups grated zucchini (1 zucchini)
- ½ teaspoon vanilla extract
- 1 ½ cups gluten free 1:1 baking flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ teaspoon cinnamon - I used Ceylon cinnamon
- ¼ teaspoon nutmeg
- ½ cup cacao powder (or cocoa powder)
- 1 cup chocolate chips
Instructions
- Preheat oven to 350°.
- Grease a 9" x 5" loaf pan with vegan butter.
- In a large mixing bowl, cream vegan butter and sugar with hand mixer or stand mixer until well combined.
- Add grated zucchini and vanilla extract. Mix with a spoon.
- Add dry ingredients. Mix with a spoon until combined.
- Fold in chocolate chips.
- Pour the batter into the greased loaf pan.
- Bake for 50-55 minutes at 350°, or until a toothpick comes out clean.
