I've wanted to make Vegan Gluten Free Banana Bread for a long time, and I finally took the plunge. This recipe, along with a bunch of other baked goods has been my latest craze in the kitchen.
If you like a sweet breakfast, this banana bread is a delicious way to start your morning. It has just the right amount of sweetness and banana flavor.
It's also great after a meal, or as a snack. It is sweet, moist, and flavorful.
Have ripe bananas you need to use up? This is a great way to make use of them. Also, this banana bread freezes well if you want to save the leftovers for later.

- Ripe bananas: Ripe bananas work best because the starch has converted into sugar. If you like to freeze bananas, like I do, you can use frozen bananas for this recipe. Just make sure to thaw the frozen bananas first. Also, make sure the bananas are really ripe before freezing.
- Granulated sugar: You may want to check brands that are vegan. Wholesome makes vegan organic cane sugar. There are other brands that have white sugar as well.
- Vegan butter: I used salted Melt Organic plant-based butter because that is the only vegan butter my grocery store had in stock. You could use your favorite vegan butter.
- Vanilla extract: Enhances flavors.
- Gluten-free 1:1 baking flour: I used Bob's Red Mill. You could use your favorite gluten-free flour blend. As long as it is a 1:1 baking flour, it should produce good results.
- Baking soda: Allows the bread to rise.
- Nutmeg: Adds a warm spice flavor.
- Salt: Enhances sweetness and balances flavors. I like to use sea salt.

🔪 Instructions

Step 1: In a mixing bowl, mash the bananas. Set aside.
Step 2: In a large mixing bowl, add room temperature vegan butter and sugar.
Step 3: With a handheld or stand mixer, cream vegan butter and sugar.
Step 4: Add mashed bananas and vanilla extract. Mix.

Step 5: Add the dry ingredients.
Step 6: Mix with a spoon until combined.
Step 7: Pour the batter into a greased loaf pan.
Step 8: Bake until a toothpick comes out clean, about 50 minutes.

Vegan Gluten Free Banana Bread
Equipment
- Hand mixer, or stand mixer
Ingredients
- 3 ripe bananas (1 ¼ cups mashed)
- ½ cup sugar
- ½ cup vegan butter softened to room temperature
- ½ teaspoon vanilla extract
- 1 ½ cups gluten free 1:1 baking flour
- 1 teaspoon baking soda
- ¼ teaspoon nutmeg
- 1 teaspoon salt
Instructions
- Preheat oven to 350°.
- Grease a 9" x 5" loaf pan with vegan butter.
- In a mixing bowl, add ripe bananas. Mash the bananas with a pastry cutter (also called a dough blender) or fork. Set aside.
- In a large mixing bowl, cream vegan butter and sugar with hand mixer or stand mixer until well combined.
- Add mashed bananas and vanilla extract. Mix with a spoon.
- Add dry ingredients. Mix with a spoon until combined.
- Pour the batter into the greased loaf pan.
- Bake for 50-55 minutes at 350°, or until a toothpick comes out clean.
