These Vegan Strawberries and Cream Popsicles are a healthy way to cool off. No special equipment required!

These Vegan Strawberries and Cream Popsicles came about as many recipes do, a need to use up an ingredient. In this case, it was strawberries.
I swear they start to turn the minute I take them out of the store. I mostly use them in my morning smoothies, but it seems like I can never use them up fast enough. That's why I prefer frozen fruit for smoothies. I can use them at my own pace.
Since it has been so hot, it's nice to have a cool treat to cool off. Other recipes to cool off with are a Strawberry Coconut Dessert, a Strawberry Shrub Drink, or a Strawberry Milkshake without Milk.

You won't need popsicle molds for these. I had some popsicle molds many years ago but got rid of them because I never used them. Now that I am a food blogger, I regret that decision.

So easy! Must admit I added maple syrup and extra strawberry juice for sweetness. (I used thawed berries.) Popsicles are in the freezer now! You have a 9-year-old's approval!
Willow Moon says
That's great! I don't have a big sweet tooth and my strawberries were sweet to begin with, but I could see where you would want to add sweetener.

These look delicious! I've made a mango version very similar to your recipe because my 5 year old is dairy-free. I'll have to give your strawberry version a try!
Willow Moon says

I always find some of my best recipes come from needing to use up an ingredient! These look so tasty! I live in Phoenix, so totally feel your pain with that "warm breeze!" Ugh! Can't wait til it's over ๐
Willow Moon says
It's funny, I always make some of my best recipes by trying to use up an ingredient or using pantry staples because I am too lazy to go shopping! I am counting the days until Fall, but at least we don't have below degree temps.!
