Healthy Dessert Pizza
For those of you who have been following me for awhile, you may have noticed that I don't post very many dessert recipes. It is because I am not much of a dessert person.
I am into chocolate though, which I try to always have stocked in my pantry.
My idea of dessert is a handful of roasted salted peanuts with dark chocolate chunks or semi-sweet chocolate chips mixed in. If I am out of roasted peanuts, I will mix chocolate chunks in peanut butter and eat it by the spoonful.
Not only is my idea of dessert about the easiest go-to there is, but I get some protein and don't have the sugar rush from a normal dessert.
Sometimes I crave something sweet other than chocolate, like the time I made Low Carb Vegan Almond Cookies, or the time I made a Peanut Butter Chocolate Chip Mug Cake.
Many times though, you'll see dessert recipes on Create Mindfully that can also be eaten for breakfast, because they are healthy enough to start your day, like my Chocolate Pudding with Raspberry Pomegranate Chia Jam or my Pumpkin Chia Pudding.
I personally wouldn't eat this Banana, Chocolate and Peanut Butter Dessert Pizza for breakfast, but it is definitely healthier than many desserts.
Easy
I used a brown rice tortilla as the pizza crust. On top of it, I layered peanut butter mixed with maple syrup.
Freshly sliced banana, coconut chips, slivered almonds, and semi-sweet chocolate chips are sprinkled on top. Then it is baked for a few minutes, and voilà, you have chocolate dessert pizza! How easy, right!
A tortilla makes a great pizza crust because you don't have to mix or roll out the dough, which also makes for a quick weeknight meal. Plus it's thin, so you aren't eating as many carbs.
Not to mention brown rice tortillas like to fall apart, so making them into a pizza is a great way to use them.

Banana, Chocolate and Peanut Butter Dessert Pizza
Ingredients
- 1 brown rice tortilla
- 2 tablespoons peanut butter
- 2 tablespoons maple syrup
- 1 banana sliced
- 2 tablespoons semi-sweet chocolate chips
- 1 tablespoon slivered almonds
- 1 tablespoon coconut chips
Instructions
- Preheat oven to 350°.
- Optional: For a really crispy tortilla bake 2-3 minutes before adding toppings.
- Mix peanut butter and maple syrup and spread on tortilla. Place sliced banana, chocolate chips, slivered almonds, and coconut chips on top of peanut butter mixture. Bake for 5-7 minutes, or until chocolate chips are melted and tortilla is slightly crispy.
