    Vegan Crunch Bars

    Made with only three ingredients, these Vegan Crunch Bars are sweet, rich, and crunchy. They are easy to make and you control the ingredients.

    Made in minutes, these Vegan Crunch Bars are super easy to make. They're both vegan and gluten-free, so they're perfect for people with food allergies.

    They are crispy and crunchy with just the right balance of sweet rich chocolate to crunchy cereal that will satisfy your chocolate cravings.

    🧾 Ingredients

    • Vegan chocolate dark chocolate baking chunks: Adds the chocolate flavor. I used dark chocolate baking chunks. You could also use semi-sweet chocolate chips. Enjoy Life makes vegan chocolate chips.
    • Brown rice crisps cereal: I used gluten-free brown rice crisps. Adds a crunchy texture. Use your favorite crispy cereal of choice.
    • Salt: Enhances the sweetness. It's very needed in my opinion. I like to use sea salt.

    🔪 Instructions

    Dark chocolate chunks in a large mixing bowl over a saucepan.

    Step 1: Place a heat-proof bowl over a small saucepan with a couple of inches of water. (If you have a double boiler, use that.) Place chocolate chunks in the bowl.

    Step 2: Heat the chocolate chunks over medium heat until melted.

    Step 3: Add salt to the smooth chocolate. Stir. Then add brown rice crisps.

    Step 4: Stir to combine.

    Step 5: Pour the melted chocolate mixture in an even layer into candy bar molds or a parchment paper lined rimmed baking sheet.

    My chocolate molds are 6 ¼" x 3" x ¼" deep and the chocolate mixture made 4 bars. Place in the freezer for 30 minutes, or fridge for a couple of hours to set.

    After they are set, peel off the chocolate bar mold, or parchment paper. Slice with a sharp knife and store in an airtight container in the fridge or freezer.

    💭 Tips

    You could also microwave the chocolate chips in a microwave-safe bowl at 30-second intervals.

    Ingredients

    • 2 cups dark chocolate baking chunks
    • 1 ¾ cup brown rice crisps cereal
    • Pinch salt

    Instructions

    • Place a heatproof bowl over a saucepan with a couple of inches of water. Place chocolate chunks in the bowl. Heat on medium heat until melted.
    • Take the bowl off the heat. Add salt and stir. Then add brown rice crisps cereal and stir to combine.
    • Immediately pour the chocolate mixture into chocolate molds or a parchment-paper lined baking sheet with a rim. Place in the or freeze for 30 minutes or the refrigerator for a couple of hours until set.

    Notes

    My chocolate molds are 6 ¼" x 3" x ¼" deep.
    You can also melt the chocolate in a microwave-safe bowl at 30-second intervals until melted.
