These Christmas Tree Rice Crispy Treats are a fun treat for the holidays. They are made with matcha green tea powder instead of green food coloring.
Rainbow sprinkles and powdered sugar icing make up the decorations. They are the perfect dessert to get the kids involved with.

Are They Vegan?
For this recipe I used vegan butter, vegan marshmallows, sweetened condensed coconut milk, and vegan rice crisp cereal, making them completely vegan.
Make sure to read the labels, especially for the rice crisp cereal. Some rice krispies cereal contains D3, which is an animal by-product.

- Rice crisp cereal: I used gluten-free rice crisp cereal. Use your favorite.
- Vegan marshmallows: I used Dandies vegan mini marshmallows.
- Sweetened condensed coconut milk: Adds a sweet rich flavor and helps the bars stay soft longer. You could also use sweetened condensed oat milk.
- Vegan butter: I used Earth Balance vegan butter. Use your favorite vegan butter.
- Matcha green tea powder: Adds a natural green color and nutrients. I like to buy a matcha powder that's a cross between premium quality and culinary quality. You could also use spirulina if you prefer a blue-green color. I haven't tried this recipe with spirulina, but if you do I would start with a lot less than the amount for matcha. Spirulina has a strong flavor.
- Powdered sugar: To make the garland. It adds sweetness.
- Soy milk: I used soy milk because that is what I had on hand. You can also use oat milk, almond milk, cashew milk, or other dairy-free milk.
- Rainbow sprinkles: I ordered colorful rainbow sprinkles online because I wanted some that were vegan gluten-free, and corn-free. They also happen to be soy-free and free of artificial dyes. Win-win! You could also use them in my Vegan Funfetti Cookie Dough.

Why Add Sweetened Condensed Coconut Milk?
The sweetened condensed coconut milk gives these rice crispy treats an ooey-gooey texture and an extra-rich taste. They stay soft longer, and when you store them in the fridge like I do, they are still soft.

๐ช Instructions
Step 1: Add vegan butter to a saucepan over low heat.
Step 2: Heat until vegan marshmallows are melted.
Step 3: Add vegan marshmallows.
Step 4: Stir until melted. The vegan marshmallows will melt into a big blob.
Step 5: Add matcha green tea powder, vanilla extract, salt, and sweetened condensed coconut milk.
Step 6: Stir the matcha marshmallow mixture to combine.
Step 7: At this point add the rice crisps cereal in batches.
Step 8: Stir to combine.
Step 9: Line a 9" x 13" baking dish with parchment paper. Spread the mixture into the baking dish. Push down with your hands to get out the air pockets. You can dampen your hands with water so that it's less sticky.
Step 10: Pull out the rice crispy treats with the parchment paper. Place on a cutting board. Slice lengthwise, then slice into triangles.
Step 11: In a small bowl, add powdered sugar and soy milk.
Step 12: Whisk to combine. Place in the fridge for 30 minutes to thicken.
Step 13: Drizzle icing in a criss-cross pattern for the garland. Sprinkle rainbow sprinkles on top for the lights.
Store in an airtight container. They will last 3-4 days at room temperature and a week in the fridge. They will stay soft because of the sweetened condensed coconut milk.

Christmas Tree Rice Crispy Treats
Ingredients
- 3 tablespoons vegan butter
- 10 ounces vegan marshmallows
- 4 cups brown rice crisps cereal
- ยผ cup sweetened condensed coconut milk
- 1 ยฝ tablespoons matcha green tea powder
- ยฝ teaspoon vanilla extract
- Pinch salt
- 1 cup powdered sugar
- 1 ยฝ tablespoons soy milk
- 1 tablespoon rainbow sprinkles
Instructions
- Melt vegan butter in a pan over low heat.
- Add vegan marshmallows and stir until melted.
- Add matcha green tea powder, vanilla extract, salt, and sweetened condensed coconut milk. Mix well. Turn off the heat.
- Add brown rice crisps cereal in batches. Mix well.
- Spread the mixture into a parchment paper lined 9" x 13" baking dish.
- Push down the mixture with damp hands. Cover and place in the fridge.
- In a small bowl add powdered sugar and soy milk. Whisk until all the lumps are out. Place in the fridge for about 30 minutes to thicken.
- After the icing thickens, pull the rice crispy treats out by the parchment paper. Slice lengthwise, then slice into triangle shapes.
- Sprinkle rainbow sprinkles on each rice crispy treat. Drizzle icing in a criss-cross pattern. The icing will harden after sitting out at room temperature or after being placed in the fridge.
