Let this refreshing fizzy Ginger Pineapple Coconut Cooler with kombucha whisk you away to the tropics!
During these hot Summer days it's nice to have a fun beverage to cool off with. It somehow makes the heat easier to deal with. I have been making a few different fun drinks, like this Ginger Pineapple Coconut Cooler.
I made this cooler with three ingredients that I love and that taste great together: ginger, pineapple, and coconut. For the ginger part of this drink I used ginger kombucha.
If you've never had kombucha before, it is a fermented drink made from a scoby, or symbiotic colony of bacteria and yeast, that grows on top of black or green tea sweetened with sugar.
Don't let the description turn you off, it is quite delicious!
I used to make my own kombucha years ago, but prefer the flavored store bought varieties. Besides the ginger flavor, I love gingerberry by GT's. I would have to say that is my all time favorite. My second favorite is their mango flavor.
GT's Kombucha comes in 16 and 48 ounce bottles. These days I like to buy the 48 ounce bottles to save money. Unfortunately, gingerberry is only available in 16 ounce bottles at the stores that I shop at, so I usually get ginger instead.
There are unique flavors from other brands too, like root beer and lemongrass ginger. If you're trying kombucha for the first time I would suggest getting a flavor that sounds appealing to you. The original flavor tastes like a cross between apple juice and apple cider vinegar, which doesn't appeal to some people.
Besides trying a delicious sounding flavor of kombucha, you could mix it in a drink like this Ginger Pineapple Coconut Cooler. I have combined ginger kombucha with pineapple and coconut milk. Yum!
This has a slightly effervescent quality from the kombucha. If you dream of a tropical island instead of wherever you happen to be, let yourself get whisked away with this tropical flavored drink. I know I did!

Ginger Pineapple Coconut Cooler
Ingredients
- ½ cup chopped pineapple
- ¼ cup full fat coconut milk
- ½ cup ginger kombucha
- Candied ginger for garnish optional
Instructions
- Blend chopped pineapple and coconut milk in a Nutribullet or blender. Pour in a glass. Pour ginger kombucha on top. Serve with candied ginger and pineapple chunks, if desired.
