This White Christmas Mojito (coconut mojito) is a festive treat for the holidays. Made with creamy coconut milk, it is a tropical island in a glass.
It also tastes great as a mocktail. When I want a refreshing drink, I love to make a mojito mocktail.

๐งพ Ingredients
- Rum: I use light rum, which is the classic mojito ingredient. It is also known as white rum or silver rum. You could also use vodka for a vodka mojito.
- Lime juice: I used fresh squeezed lime juice. I don't recommend store-bought lime juice because it has additives.
- Coconut milk: I used full-fat coconut milk. It adds a rich creamy coconut flavor. You could also use light coconut milk. Depending on how many mojitos you make, you may not use all the coconut milk. Some other holiday recipes using coconut milk are my Chocolate Peppermint Truffles and my Vegan Eggnog.
- Agave syrup: Adds sweetness. You could also use sugar or coconut sugar.
- Fresh mint leaves: Adds the minty flavor mojitos are known for. Spearmint (or sweet mint) is best for mojitos. Peppermint is too strong.
- Club soda: Any sparkling water will work.

๐ช Instructions
Step 1: Add mint leaves and lime juice into a cocktail shaker. Muddle to break up the mint leaves.
Step 2: Add ice, agave syrup, coconut milk, and rum to the cocktail shaker. Put the cover on and give it a good shake.
Step 3: Pour the mojito mixture into a glass.
Step 4: Top with club soda and garnish with mint or lime wedges.

Light rum, also known as white rum or silver rum is the classic ingredient in mojitos.
Vodka would taste great in this mojito in place of the rum.

White Christmas Mojito
Ingredients
- 2 tablespoons lime juice
- 6 mint leaves
- 2 ounces light rum
- 1 tablespoon agave syrup
- ยฝ cup full-fat coconut milk
- Club soda
Instructions
- To a cocktail shaker add lime juice and mint leaves. Muddle to break up the mint leaves.
- Add ice, rum, coconut milk, and agave syrup. Put the cover on and give it a good shake.
- Pour into two glasses. Pour club soda on top.
