These healthy oven-roasted Vegan Cauliflower Steaks with Cilantro Tahini Dressing are an easy meal or side dish.

These Vegan Cauliflower Steaks are a meal in and of itself. Roasted cauliflower goes with many different flavors, but one of my favorite ways to eat it is with tahini dressing.
The added cilantro adds a bright herby taste. I roasted the cauliflower with basil, olive oil, salt, and pepper.
Roasted cauliflower is probably my favorite way to prepare it. Sure it's also good mashed, riced, and made into a Vegan Alfredo Sauce, but there's just something about roasted cauliflower that I can't get enough of.
That's one of the reasons I found myself eating two cauliflower steaks in one sitting. It's so good!

Cilantro Tahini Dressing
- Cilantro: Adds a fresh herby flavor. You could also use parsley, like I did for my Tahini Dressing recipe, or roasted red pepper like I did for my Roasted Red Pepper Dressing recipe. Turmeric Tahini Dressing is another option to use in place of the cilantro tahini dressing.
- Tahini: Adds a creamy nutty flavor.
- Lemon juice: Adds a tangy flavor. I recommend freshly juiced lemons instead of store-bought lemon juice because it has additives.
- Garlic: Adds a pungent flavor.
- Salt and pepper: Enhances flavors and adds flavor.
- Water
Cauliflower Steaks
- Cauliflower: You will get about 2 steaks per head of cauliflower, depending upon the size. The larger the cauliflower the better.
- Olive oil: For roasting the cauliflower and crisping the edges.
- Dried basil: Adds flavor. You could also use oregano or Italian seasoning.
- Salt and pepper: Enhances flavors and adds flavor.

Cilantro Tahini Dressing
Mix all the ingredients until smooth and creamy. Refrigerate.
Cauliflower Steaks
Step 1: Using a sharp knife, slice ยพ" to 1" slices.
Step 2: Place cauliflower steaks on a parchment-lined baking sheet.
Step 3: Brush olive oil on steaks.
Step 4: Sprinkle seasonings on each cauliflower steak.
Step 5: Bake until golden on the edges.
๐ญ Tips
- A head of cauliflower will only yield about two cauliflower steaks before they start to fall apart. You can always roast the small pieces with the cauliflower steaks, just check on them at about halfway through the cooking process. They will roast faster since they're smaller.
- Make the cilantro tahini dressing the day before. It not only tastes better the next day, but it will thicken up a little bit.
- Measure the cilantro after chopping for better accuracy.

Place the head of cauliflower on a cutting board with the core side down. Using a sharp knife, slice ยพ" to 1" slices.
You can store unopened tahini in a cool dark area of the pantry. I like to store it upside down so that when I mix it all the oils mix into it better. Once opened, store it in the refrigerator.

Vegan Cauliflower Steaks with Cilantro Tahini Dressing
Ingredients
- 2 heads cauliflower (You'll get about 2 steaks per head)
- 2 tablespoons olive oil
- ยฝ teaspoon dried basil
- Salt and pepper
Cilantro Tahini Dressing
- ยผ cup tahini
- ยผ cup lemon juice
- 1 clove garlic minced
- ยผ cup chopped cilantro
- ยฝ cup water*
- Salt and pepper
Instructions
- Preheat oven to 450ยฐF.
- Slice cauliflower into steaks. Place cauliflower steaks on a parchment lined baking sheet. Brush olive oil on cauliflower. Sprinkle seasonings on cauliflower. Bake atย 450ยฐF for 20 minutes, or until golden brown on edges.
Cilantro Tahini Dressing
- Mix all ingredients. Let sit overnight for the best flavor and so it can thicken up.
