Step 1: Steam cauliflower. Let cool.
Step 2: In a food processor, mix steamed cauliflower, vegan butter or olive oil, salt and pepper, and sour cream if you are adding it.

Vegan Mashed Cauliflower
Equipment
Ingredients
- 1 head of cauliflower broken into florets
- 1 tablespoons olive oil or Earth Balance vegan spread
- 1 Tablespoon vegan sour cream - I used Tofutti (optional)
- Salt and pepper
Instructions
- Steam cauliflower until tender. Let sit until cool.
- Blend all ingredients in a food processor.
- Reheat and enjoy!
