    This Vegan Mashed Cauliflower is a much healthier version of vegan mashed potatoes for the holidays.

    This easy, simple recipe is so tasty. I can eat a whole head of mashed cauliflower in one sitting. Talk about comfort food!

    For those on a keto diet, this Mashed Cauliflower recipe is for you! It is vegan and gluten-free as well.

    🔪 Instructions

    Step 1: Steam cauliflower. Let cool.

    Step 2: Add steamed cauliflower, vegan butter or olive oil, salt and pepper, and sour cream if you are using it to a food processor.

    Ingredients

    • 1 head of cauliflower broken into florets
    • 1 tablespoons olive oil or Earth Balance vegan spread
    • 1 Tablespoon vegan sour cream - I used Tofutti (optional)
    • Salt and pepper
    US Customary - Metric

    Instructions

    • Steam cauliflower until tender. Let sit until cool.
    • Blend all ingredients in a food processor.
    • Reheat and enjoy!

    Notes

    This recipe will last 3-5 days in an airtight container in the fridge.
