This Mashed Cauliflower is a much healthier version of mashed potatoes for the holidays.
This easy, simple recipe is so tasty. I can eat a whole head of mashed cauliflower in one sitting. Talk about comfort food!
Steam cauliflower. Let cool.
In a food processor, mix steamed cauliflower, Earth Balance or olive oil, salt and pepper, and sour cream if you are adding it.
This recipe will last 3-5 days in an airtight container in the fridge.

You May Need
- 1 head of cauliflower broken into florets
- 1 tablespoons olive oil or Earth Balance vegan spread
- 1 Tablespoon vegan sour cream - I used Tofutti (optional)
- Salt and pepper
- Steam cauliflower until tender. Let sit until cool.
- Blend all ingredients in a food processor.
- Reheat and enjoy!
