This vegan gluten free Thai Pizza has all the flavors of Thai spring rolls on a crispy pizza crust. The peanut sauce is out of this world good!

If you were to ask me to choose one food that I that I could bring on a deserted island, it would be this vegan Thai Pizza.
First of all, I could practically drink the sauce. Second, I love the taste of ginger garlic flavored tofu. Third, it's a pizza, need I say more?
This Thai Pizza recipe has all the components of vegetable spring rolls: red pepper, carrots, and cilantro. Add some ginger garlic tofu, a pizza crust, and voilà; Thai Pizza is born.
This could be eaten hot or cold. I remember days of eating cold pizza for breakfast. I have not done that in years, but this could work for that. I personally liked it hot better.
Another recipe with peanut butter is my Payday Bars recipe. Another Thai-inspired recipe is my Thai Green Curry Salad recipe.

- Peanut butter: I used all-natural peanut butter. You could also use shelf-stable peanut butter.
- Coconut milk: I used light coconut milk, but full-fat coconut milk would also work.

- Coconut sugar: Adds sweetness. You could also use maple syrup, brown sugar, white sugar, or your favorite sweetener.
- Sesame oil: Adds a nutty flavor.I used toasted sesame oil

🔪 Instructions
- Peanut sauce: Mix peanut sauce ingredients in a high speed blender or Nutribullet. Place in the fridge to thicken.
- Ginger garlic tofu: In a bowl, whisk ginger, garlic, tamari, and sesame oil.
- Drain and press tofu. If you don't have a tofu press, you can place tofu in between a clean towel and place a heavy object on top of it, like a cast iron skillet. Let it sit 15 minutes.
- Slice tofu and place in the ginger garlic marinade and let it sit 1 hour to overnight.
- Pour sesame oil in a skillet. Heat on medium heat and add sliced marinated tofu. Cook on both sides until golden brown.
- Pizza dough: Make according to directions and prebake if necessary.
- Spread peanut sauce onto dough. Then layer cooked tofu, carrots, and red bell pepper. Bake for about 10 minutes to warm it through.
- Drizzle more peanut sauce on top and sprinkle fresh cilantro on top.
🥡 Storage
This Thai pizza recipe will last about 5 days in an airtight container in the fridge.

Today is the second time that I'm making this recipe and I just taste tested the sauce and almost didn't leave any for the pizza 😀 It taste soo amazing! I love peanut flavoured everything!
I did leave out the coconut sugar in the sauce this time because it is already sweet enough by itself. Is there any other reason why I should add it? 🙂
Thank you for this amazing recipe!!
Willow Moon says
Thanks Leah! The coconut sugar is to add a sweet flavor, so you can leave it out if you find it sweet enough without it.
