    Tofu Alfredo

    This Tofu Alfredo is rich, creamy, and cheesy. Made with silken tofu, it comes together in about 15 minutes.

    "Another winner Willow! I do have a question though Do you put the onion/garlic mixture in the food processor with the Alfredo ingredients? Or do they just go into the noodles after draining? 

    For grins and giggles, I added some broken asparagus spears and a good handful of frozen peas to the mix. I did put the onion/garlic in the food processor and gave it a pulse or two. Then sauteed the asparagus and the peas. Tossed it all together at the end and plated. It was pretty with the green! And delicious!! The silken tofu is definitely a good Alfredo base.     This simple Tofu Alfredo is a quick meal. Made with silken tofu, nutritional yeast, and miso paste, it's rich, cheesy, and creamy.

    It's healthier than the original. Silken tofu has a bit of protein, and you could use chickpea pasta for even more protein.

    Customize it to your liking by adding veggies, vegan chicken, soy curls, or baked tofu.

    • It's rich and creamy, with a cheesy flavor from nutritional yeast and white miso paste.
    • Made in about 15 minutes, it's an easy weeknight meal.
    • It's a healthy alternative to the original.

    🧾 Ingredients

    • Onion: I used a yellow onion.
    • Olive oil: For cooking the onions and garlic.
    • Silken tofu: Is bland on its own, but takes on the flavors you add to it. It provides a silky creamy texture. I used silken firm found in the refrigerated part of the grocery store.
    • Garlic: Adds a pungent flavor.
    • Nutritional yeast: Adds a cheesy flavor. You could try store-bought vegan parmesan. I haven't tried it, but am sure it would work.
    • Lemon juice: Adds a tangy flavor.
    • White miso paste: Adds a pungent nutty, cheesy flavor. Make sure to check labels for gluten-free. White miso paste is the mildest of the miso varieties.
    • Salt and pepper: Adds flavor and enhances flavors.
    • Fettuccine noodles: I used rice noodles.

    🔪 Instructions

    Chopped onions in a skillet with spatula.

    Step 1: Add the olive oil to a skillet. Heat on medium heat and add chopped onions. Cook until translucent.

    Minced garlic added to the pan of chopped onions.

    Step 2: Add minced garlic. Cook 30 seconds.

    Step 3: Add silken tofu, nutritional yeast, miso paste, spices, lemon juice, and cooked onions and garlic to a food processor.

    Step 4: Mix until smooth and creamy.

    Rice noodles in a pot of boiling water.

    Step 5: Add water to a saucepan. Bring to a boil, add noodles, and reduce to a simmer. Cook for as long as package says, depending on the type of pasta you're using.

    Step 6: Drain water and add Alfredo sauce.

    Tofu Alfredo

    Equipment

    • food processor

    Ingredients

    • ½ cup chopped onion
    • 2 cloves garlic minced
    • 1 tablespoon olive oil
    • 2 tablespoons nutritional yeast
    • 2 tablespoons lemon juice
    • 1 tablespoon white miso paste
    • Salt and pepper
    • 16 ounces silken tofu
    • 16 ounces fettuccine noodles - I used rice noodles

    Instructions

    • Add olive oil to a skillet. Heat on medium and add chopped onions. Cook until translucent.
    • Add minced garlic. Cook 30 seconds.
    • In a food processor add the onion garlic mixture along with the rest of the ingredients (except pasta). Mix until smooth and creamy.
    • Add water to a sauce pan. Bring to a boil, add noodles, and reduce to a simmer. Cook per instructions on package, depending which noodles you're using. Mine cooked for about 8 minutes.
    • Drain the pasta water and add Alfredo sauce. Mix thoroughly.

    Notes

    This recipe will last about 5 days in an airtight container in the fridge.

        Thanks Suzy! Yes, you put the onion garlic mixture in with the rest of ingredients. I just edited the recipe to make that clear. Thanks! Asparagus, peas, and crushed red pepper all sound like great additions.
