This Tofu Salad Sandwich is one of my go-to meals when I want a meal in a hurry. Since there's no cooking involved it takes about 5 minutes.
If you miss egg salad sandwiches, this vegan egg salad recipe is for you! It has a similar texture and flavor to egg salad.
I have been making this tofu salad for years. I originally posted this recipe a few years ago, but I have updated it with new photos and a video.

- Tofu: I used firm tofu, but you could also use extra firm tofu.
- Vegan mayo: Adds a creamy rich flavor.
- Sweet pickle relish: I used sweet relish, but you could also use dill pickle relish or chopped pickles.
- Mustard: Adds a tangy flavor. You could use Dijon mustard, yellow mustard, or mustard powder.
- Turmeric: This is mainly for adding a yellow color, but it also adds flavor. You could leave it out.
- Celery: For crunch and flavor.
- Green onions: Add a mild onion flavor. You could also use a red onion.
- Salt and black pepper: Enhances the other flavors and adds flavor. I like to use sea salt.

Step 1: Add vegan mayo, sweet pickle relish, turmeric, mustard, and salt and pepper into a large mixing bowl.
Step 2: Mix until well combined.
Step 3: In a separate large mixing bowl crumble (or mash with a fork) firm tofu or extra firm tofu into small pieces.
Step 4: To the crumbled tofu add chopped celery, green onion,
Step 5: To the bowl add the dressing.
Step 6: Mix well and store in an airtight container in the fridge.
Serve on a bed of lettuce, by itself, or on a slice of bread.
Do I Need to Press the Tofu?
There is no need to press the tofu. If you buy tofu in the refrigerated section, drain it first to remove the excess water.
Which Mayo is Vegan?
There are quite a few brands that make vegan mayonnaise. My favorite so far is Follow Your Heart Vegenaise.

Tofu Salad Sandwich
Ingredients
- ยฝ cup vegan mayo or to taste
- ยฝ cup sweet pickle relish or to taste
- 1 ยฝ teaspoon mustard or ยฝ teaspoon mustard powder
- 1 teaspoon turmeric
- Salt and Pepper
- 14 oz firm tofu drained
- 1 cup chopped celery (2 stalks)
- 2 tablespoons chopped green onion
- Bread
Instructions
- Mix vegan mayo, pickle relish, mustard, turmeric, salt and pepper.ย ย
- Crumble tofu and add to dressing.
- Add chopped celery and green onion, and mix well.ย
- Mix thoroughly, and serve over greens, in a wrap or sandwich.

Made salad for lunch. Easy and delicious; will make again. (Used half-batch for sandwiches; made tofu ricotta with other half of tofu package to use in a casserole instead of cheese. Ricotta recipe is also easy and tasty.)
