    This healthy Tofu Salad Sandwich is a quick and easy light lunch. Made with sweet pickle relish and vegan mayo.

    This Tofu Salad Sandwich is one of my go-to meals when I want a meal in a hurry. Since there's no cooking involved it takes about 5 minutes.

    If you miss egg salad sandwiches, this vegan egg salad recipe is for you! It has a similar texture and flavor to egg salad.

    I have been making this tofu salad for years. I originally posted this recipe a few years ago, but I have updated it with new photos and a video.

    If you like curry, I also have a Curried Tofu Salad, which has a balance of sweet and savory flavors.

    🧾 Ingredients

    • Tofu: I used firm tofu, but you could also use extra firm tofu.
    • Vegan mayo: Adds a creamy rich flavor.
    • Sweet pickle relish: I used sweet relish, but you could also use dill pickle relish or chopped pickles.
    • Mustard: Adds a tangy flavor. You could use Dijon mustard, yellow mustard, or mustard powder.
    • Turmeric: This is mainly for adding a yellow color, but it also adds flavor. You could leave it out.
    • Celery: For crunch and flavor.
    • Green onions: Add a mild onion flavor. You could also use a red onion.
    • Salt and black pepper: Enhances the other flavors and adds flavor. I like to use sea salt.
    • Bread

    📖 Variations / Additions

    • Fresh chives, dill, parsley, or other fresh herbs
    • Dill pickle relish or chopped pickles

    🔪 Instructions

    Creamy Dressing in a large bowl before and after mixing.

    Step 1: Add vegan mayo, sweet pickle relish, turmeric, mustard, and salt and pepper into a large mixing bowl.

    Step 2: Mix until well combined.

    Crumbled block of tofu in a bowl. Veggies added to the bowl.

    Step 3: In a separate large mixing bowl crumble (or mash with a fork) firm tofu or extra firm tofu into small pieces.

    Step 4: To the crumbled tofu add chopped celery, green onion,

    Step 5: To the bowl add the dressing.

    Step 6: Mix well and store in an airtight container in the fridge.

    Serve on a bed of lettuce, by itself, or on a slice of bread.

    Do I Need to Press the Tofu?

    There is no need to press the tofu. If you buy tofu in the refrigerated section, drain it first to remove the excess water.

    Which Mayo is Vegan?

    There are quite a few brands that make vegan mayonnaise. My favorite so far is Follow Your Heart Vegenaise.

    Tofu Salad Sandwich

    This sweet and savory vegan Tofu Salad Sandwich is a quick and easy light lunch. Made with sweet pickle relish and vegan mayo, it is sure to please!

    Ingredients

    • ½ cup vegan mayo or to taste
    • ½ cup sweet pickle relish or to taste
    • 1 ½ teaspoon mustard or ½ teaspoon mustard powder
    • 1 teaspoon turmeric
    • Salt and Pepper
    • 14 ounces firm tofu drained
    • 1 cup chopped celery (2 stalks)
    • 2 tablespoons chopped green onion
    • Bread

    Instructions

    • Mix vegan mayo, pickle relish, mustard, turmeric, salt, and pepper in a large bowl.  
    • Crumble tofu and add to dressing.
    • Add chopped celery and green onion, and mix well. 
    • Mix thoroughly, and serve over greens, in a wrap or sandwich.

    Notes

    Tofu salad will last up to 5 days in an airtight container in the fridge.
