This Tofu Salad Sandwich is one of my go-to meals when I want a meal in a hurry. Since there’s no cooking involved it takes about 5 minutes.
I have been making this salad for years. I originally posted this recipe a few years ago, but have updated it with new photos and a video.
How to Make a Tofu Salad Sandwich
Make the dressing by mixing vegan mayo, sweet pickle relish, turmeric, mustard, and salt and pepper.
Crumble firm tofu or extra firm tofu into tiny bits. To the crumbled tofu add chopped celery, green onion, and the dressing. Mix well.
Serve on a bed of lettuce, by itself, or in a sandwich.

You May Need:
- Mix vegan mayo, pickle relish, mustard, turmeric, salt and pepper.
