This healthy Tofu Salad Sandwich is a quick and easy light lunch. Made with sweet pickle relish and vegan mayo.

This Tofu Salad Sandwich is one of my go-to meals when I want a meal in a hurry. Since there's no cooking involved it takes about 5 minutes.
If you miss egg salad, this tofu egg salad is for you! It has a similar texture and flavor to egg salad.
I have been making this tofu salad for years. I originally posted this recipe a few years ago, but have updated it with new photos and a video.

- Tofu: I used firm tofu, but you could also use extra firm tofu.
- Vegan mayo: Adds a creamy rich flavor.
- Pickle relish: I used sweet pickle relish, but you could also use dill pickle relish.
- Mustard: Adds a tangy flavor. You could use Dijon mustard, yellow mustard or mustard powder.
- Turmeric: This is mainly for adding color, but it also adds flavor. You could leave it out.
- Celery: For crunch and flavor.
- Green onion: Adds a mild onion flavor. You could also use red onion.
- Salt and pepper: Enhances the other flavors and adds flavor.

🔪 Instructions
Make the dressing by mixing vegan mayo, sweet pickle relish, turmeric, mustard, and salt and pepper in a medium mixing bowl.
Crumble (or mash with a fork) firm tofu or extra firm tofu into tiny bits.
To the crumbled tofu add chopped celery, green onion, and the dressing. Mix well.
Serve on a bed of lettuce, by itself, or in a sandwich on two slices of bread.
Do I Need to Press the Tofu?
There is no need to press the tofu. If you buy tofu in the refrigerated section, drain it first.
Which Mayo is Vegan?
There are quite a few brands that make vegan mayonnaise. My favorite so far is Follow Your Heart Vegenaise.

Tofu salad will last up to 5 days in an airtight container in the fridge.

Tofu Salad
Ingredients
- ½ cup vegan mayo or to taste
- ½ cup sweet pickle relish or to taste
- 1 ½ teaspoon mustard or ½ teaspoon mustard powder
- 1 teaspoon turmeric
- Salt and Pepper
- 14 oz firm tofu drained
- 1 cup chopped celery (2 stalks)
- 2 tablespoons chopped green onion
Instructions
- Mix vegan mayo, pickle relish, mustard, turmeric, salt and pepper. Â
- Crumble tofu and add to dressing.
- Add chopped celery and green onion, and mix well.Â
- Mix thoroughly, and serve over greens, in a wrap or sandwich.
