    Made in 15 minutes, this Vegan Chickpea Salad Sandwich is a quick healthy lunch. Eat it by itself or in a wrap. It can even be eaten as a dip with crackers.

    This Vegan Chickpea Salad Sandwich is the vegan version of a classic. It has the flavors of an egg salad sandwich but with chickpeas instead.

    I've used the same flavors with tofu in a Vegan Egg Salad, which is actually more the consistency of an egg salad.

    If you want to mimic tuna salad, you could add some seaweed for an out-of-the-ocean flavor, which is what I did for my Jackfruit Tuna Salad recipe.

    This sandwich is well balanced, with sweet flavors of sweet pickle relish, and savory flavors of celery and red onion. Mustard and vegan mayo marry it all together.

    The result is a sweet and savory salad with creamy and crunchy textures.

    The flavors get stronger after sitting in the fridge overnight. It is the perfect salad sandwich for a quick and easy lunch.

    • It is made in about 15 minutes, making it an easy lunch or weeknight meal.
    • It is packed with flavor. Eat this chickpea salad on a bed of lettuce in a sandwich, or by itself.
    • It's the vegan version of a classic; what's not to love?

    🧾 Ingredients

    • Chickpeas (garbanzo beans): Add a creamy texture.
    • Celery: Adds some crunch. You could also use red peppers or carrots.
    • Red onion: You could also use green onions.
    • Vegan mayonnaise: I love Vegenaise by Follow Your Heart. Use your favorite vegan mayo.
    • Mustard: I used spicy brown mustard because that is what I had on hand. You could also use Dijon mustard or yellow mustard.
    • Pickle relish: I used sweet pickle relish because I love the sweet flavor, but you could use dill pickle relish if you prefer.
    • Salt and black pepper: Enhances flavors and adds flavor. I like to use sea salt.
    • Bread: I used gluten-free bread that I toasted. Use your favorite bread.

    🔪 Instructions

    Dressing ingredients in a small mixing bowl

    Step 1: In a small bowl, add dressing ingredients.

    Step 2: Mix until combined.

    Mashed chickpeas in a large mixing bowl with potato masher.

    Step 3: In a separate mixing bowl, add chickpeas and mash until about half the chickpeas are mashed. You could also add them with the dressing to a food processor and pulse until you get the consistency you want.

    The rest of the ingredients added to the large bowl before mixing.

    Step 4: Add dressing, chopped red onion, celery, and pickle relish.

    Step 5: Stir well to combine.

    Chickpea salad spread on toast. Pickles and onions on another slice of toast.

    Step 6: Spread on toast with your favorite toppings and store any leftovers in an airtight container in the fridge.

    Ingredients

    • ¼ cup vegan mayo
    • 1 teaspoon mustard - I used spicy brown
    • ¼ cup sweet pickle relish
    • Salt and pepper
    • 15.5 ounces garbanzo beans (chickpeas)
    • 1 cup diced celery (2 stalks)
    • ¼ cup chopped red onion
    • 10 slices gluten free bread toasted

    Instructions

    • In a small bowl add vegan mayo, mustard, sweet pickle relish, and salt and pepper. Mix well.
    • In a separate bowl add chickpeas and mash until about half the chickpeas are mashed. You could also put the dressing and chickpeas in a food processor and pulse until you get the consistency you want.
    • Add dressing, diced celery, and chopped red onion to the bowl of chickpeas. Mix well.
    • Spread on toast with your favorite toppings like lettuce, tomato, and pickles.

    This recipe will last 5 days in an airtight container in the fridge.

      Thank you for this chickpea salad recipe. It sounds perfect as is to me, but for family use I'll need to sub something for the red onion. I thought I'd use diced water chestnut with a touch of garlic.4 stars
