This easy Chai Chia Pudding is made with homemade chai spice mix. You can make it with or without black tea for a boost of energy.

This healthy Chai Chia Pudding is made with warming chai spices. It tastes like a chai latte but in pudding form.
I've included two ways to make it: with and without black tea. If you want a boost of energy making it with black tea is a great option.
This chai latte chia pudding can be eaten for breakfast, as a snack, or for dessert. It is dairy-free, gluten-free, and can be made keto by using a sugar free sweetener.

- Chia seeds: Get gelatinous when you add liquid.
- Black tea: I show how to make this recipe with and without black tea in case you don't want the added caffeine.
- Soy milk: I used soy milk, but you could use almond milk, oat milk, cashew milk, or your favorite dairy-free milk.
- Chai spice mix: Adds the warming chai flavor. I used a homemade chai spice mix. You could use store-bought chai spice or chai tea.
- Maple syrup: Adds sweetness. You could also use agave syrup, dates, or your favorite sweetener.
- Vanilla Extract: Enhances flavors.
- Salt: Enhances sweetness.

🔪 Instructions
- Mix chia seeds, soy milk, and black tea (if using). Let the mixture sit for an hour.
- Add chai spice mix, maple syrup, vanilla extract and salt. Whisk with a fork to get the clumps out.
- For a creamy traditional pudding texture, blend in a Nutribullet or high speed blender until smooth and creamy.

This chia pudding recipe will last about 5 days in an airtight container in the fridge.
💭 Tips
- If you are in a hurry, use a chai tea bag in place of the chai spice mix.
- For a traditional pudding consistency, blend all the ingredients in a high speed blender.
- Taste as you go; you may want more or less sweetener or spices.

Chai Chia Pudding
Ingredients
With Black Tea
- ¼ cup chia seeds
- ½ cup water
- 1 black tea bag
- ½ cup soy milk
- 1 teaspoon chai spice mix
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- Pinch salt
Without Black Tea
- ¼ cup chia seeds
- 1 cup soy milk
- 1 teaspoon chai spice mix
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- Pinch salt
Instructions
With Black Tea
- Heat water in a saucepan or in the microwave. Add black tea bag. Let steep 3-5 minutes. Discard tea bag.
- Mix chia seeds, black tea, and soy milk. Let sit 1 hour to get gelatinous.
- Add chai spice mix, maple syrup, vanilla extract, and salt. Mix with a fork to get clumps out.
Without Black Tea
- Mix chia seeds and soy milk. Let sit 1 hour to get gelatinous.
- Add chai spice mix, maple syrup, vanilla extract, and salt. Mix with a fork to get clumps out.
