This is literally the last chia pudding recipe you'll ever need! That's what I thought after I tasted this. This is my all-time favorite chia breakfast pudding I've ever made.
Sweetened condensed coconut milk and coffee are a match made in heaven, and sweetened condensed coconut milk is one of my favorite ingredients to add to desserts.
This chia pudding came about because I had some sweetened condensed coconut milk left over after making some Vegan Rice Crispy Treats.
Eat this chia seed pudding for breakfast or dessert. After you taste it, I bet it'll be your favorite too!

🧾 Ingredients
- Chia seeds: Become gelatinous when you add liquid.
- Coffee: I used cold brew coffee because it is less acidic. You can use regular coffee. A shot of espresso, espresso powder, or instant coffee would also work.
- Sweetened condensed coconut milk: Adds a rich sweet flavor. It's the vegan version of sweetened condensed milk, which is traditionally used in Thai coffee. You could also use almond milk or another dairy-free milk of choice along with maple syrup or another sweetener of choice, but it won't be as rich.
- Vanilla extract: Enhances flavors.
- Salt: Enhances sweetness. I like to use sea salt.

Step 1: Add chia seeds and cold brew coffee or hot coffee into a mason jar or mixing bowl.
Step 2: Let it sit for an hour or overnight to enjoy the next morning. Add sweetened condensed coconut milk, vanilla extract, and salt. Stir with a fork to get the clumps out.
Step 3: For a creamy traditional pudding texture, blend in a Nutribullet or high-speed blender until smooth and creamy.

Thai Coffee Chia Pudding
Ingredients
- ¼ cup chia seeds
- ¾ cup cold brew coffee
- ¼ cup sweetened condensed coconut milk
- 1 teaspoon vanilla extract
- Pinch salt
Instructions
- Mix chia seeds, coffee, and sweetened condensed coconut milk. Let sit for an hour in the fridge.

**Important! If you are gluten free you may want to avoid coffee altogether. I personally have never had a problem drinking it, and I have a gluten intolerance. It is probably because I drink whole bean organic coffee, and grind it myself. I learned that it can be problematic for people who don't tolerate gluten. So I did some research and one article mentioned to try organic whole bean coffee because it isn't highly processed causing cross-reactivity issues. So please do the research yourself, and test it out. I try to only post recipes that are 100% gluten free since I have a gluten intolerance. I am really careful about avoiding gluten in my daily life.

I hope you like it! You can also add sweetened condensed coconut milk to a cup of coffee in place of sugar and creamer. It's delicious!
