I have been making a lot of mojitos recently. It is one of my favorite cocktails. Mojito mocktails are a delicious and fun alternative to soda.
I made a lemon ginger mocktail mojito with ginger beer which inspired me to make this Lemon Ginger Mojito with minced ginger.
If you want some extra sweetness, you could make this mojito with ginger beer. I personally like this version, because it is lighter and not as filling.

- Fresh lemon juice: Fresh lemon juice is best. I do not recommend store-bought lemon juice because it has additives. You could also use fresh lemonade and leave out the agave syrup from this recipe since lemonade is sweetened.
- Fresh lime juice: I love key lime juice, but you could use another variety. When I republished this recipe I couldn't find key limes at my local grocery store.
- Club soda: You could use another type of sparkling water.
- Fresh mint leaves: Adds the minty flavor mojitos are known for. I have a mint plant that I grow indoors. It saves me a lot of money since I love mint so much. Spearmint (or sweet mint) is best for mojitos. Peppermint is too strong.
- Ginger root: Fresh root is best. You could also use ginger syrup if you prefer a simple syrup.
- Agave syrup: I like agave syrup because it has a neutral flavor. You could also use simple syrup.
- Light rum: I use light rum, which is the classic mojito ingredient. It is also known as white rum or silver rum. You could also use vodka for a vodka mojito.

Step 1: Add mint leaves, lemon juice, and lime juice into a cocktail shaker. Muddle to break up the mint leaves with a cocktail muddler or flat end of a wooden spoon.
Step 2: Add minced ginger, agave syrup, and light rum into the cocktail shaker along with ice. Give it a good shake.
Step 3: Pour the mojito mixture into a tall glass (highball glass) with ice.
Step 4: Top with club soda. Garnish with lemon wedges or lime wedges.

I prefer club soda, but you could use any sparkling water.
You can use lemon juice in place of lime juice.

Lemon Ginger Mojito
Equipment
- Cocktail shaker
- Muddler or tip of wooden spoon
Ingredients
- 2 tablespoons lemon juice
- 2 tablespoons key lime juice
- 6 mint leaves
- 2 teaspoons ginger minced
- 2 oz. light rum
- 2 tablespoons agave syrup
- club soda
Instructions
- Add mint leaves, lemon juice, and lime juice into a cocktail shaker. Muddle to break up the mint leaves with a cocktail muddler or flat end of a wooden spoon.
- Add minced ginger, agave syrup, and light rum into the cocktail shaker along with ice. Give it a good shake.
