This vegan Thai Veggie Wrap is an easy healthy meal. Made with a spicy peanut sauce, it is similar to spring rolls.

Anytime I can add peanut sauce to a meal, I am all over it. I could practically drink the stuff. This Thai Veggie Wrap has veggies and peanut sauce like a spring roll, but it's in wrap form.
Crunchy veggies, sweet and spicy peanut sauce, what's not to love?
Veggie sandwiches and Vegan Veggie Wraps with Cream Cheese are some of my go-to lunches. They are healthy, hearty, and packed with flavor.
In addition to this peanut sauce, I like to add hummus to my veggie sandwiches. It's a great way to switch up the flavors.

🧾 Ingredients
- Tortillas: I used some local spinach amaranth tortillas. Use your favorite.
- Red pepper, cucumber, and carrots: Add crunch.
- Avocado: Adds a creamy texture.
- Cilantro and mint: Traditionally found in spring rolls. Adds flavor. You could use both or just one or the other.
- Peanut butter: Adds a nutty creamy flavor. You could substitute almond butter, cashew butter, or sunflower seed butter.
- Tamari: I use low-sodium gluten free tamari because I like to control the amount of sodium. You could also use soy sauce, Bragg's aminos, or coconut aminos.
- Sriracha sauce: Adds spice.
- Sweet red chili sauce: Adds spice and sweetness.
- Lime juice: Adds a tangy flavor and balances the sauce out. You could also use rice vinegar.

🔪 Instructions
Step 1: Add peanut butter, sweet chili sauce, sriracha sauce, tamari, lime juice, and water into a mixing bowl. Whisk.
Step 2: Spread the peanut sauce on the tortilla. If your tortilla is not very pliable, warm it on the stovetop or in the microwave. Lay veggies on peanut sauce with cilantro and mint.
Step 3: Roll tightly, pulling the vegetables in towards you as you tightly roll the wrap.

Thai Veggie Wrap
Ingredients
Thai Wraps
- 1 large red pepper julienned
- 1 carrot julienned
- 1 cucumber julienned
- 2 avocados sliced
- Cilantro
- Mint
- 4 gluten free tortillas - I used spinach amaranth
Peanut Sauce
- ¼ cup peanut butter
- ¼ cup sweet chili sauce
- 1 tablespoon low sodium gluten free tamari
- 2 tablespoons lime juice
- 2 teaspoons sriracha sauce
- Water to thin if desired
Instructions
- Peanut Sauce: Mix all ingredients in a small bowl. Add water if desired.
- Thai Wraps: Spread peanut sauce on a tortilla. Layer julienned red pepper, carrot, cucumber, avocado, and cilantro on tortilla.
- Fold over sides of tortilla and roll away from you making a tight burrito. Repeat with the rest of tortillas.
