This is about one of the easiest meals that you could make, making it perfect for weeknights. Hummus literally takes minutes to whip up. Throw the ingredients in a food processor, mix, and you’re done.
I used to buy hummus before starting Create Mindfully. That was before I found my own formula for making it. I always start with the same amount of tahini, garbanzo or other bean, lemon juice, and garlic for the base. Then I add in flavors.
Packing Tip
I learned a tip from the web today that I want to share with you all. If you’re going to pack this sandwich for work or travel, use wax paper instead of plastic wrap or a resealable plastic bag. It will prevent the bread from absorbing too much moisture.
I haven’t tried it yet, but it sounds like a great idea.

Gluten Free Bread
Before going gluten free, I used to eat a lot more sandwiches. The gluten free bread that I buy is alright, but I have yet to find one where I am 100% satisfied with both the taste and texture. One gluten free bread that comes close is Pamela’s gluten free pizza mix, made into buns. I used it to make a Vegan BLAT and a Balsamic Roasted Vegetable Sandwich.
For this Veggie Sandwich with Basil Pesto Hummus, I used brown rice bread. It definitely is less work than using Pamela’s because you don’t have to mix the dough or wait for it to rise.
Hummus is one of my favorite sandwich condiments, so when I made my basil pesto hummus, I knew it was destined to go in a sandwich.

*Update since writing this: Thanks to a reader, the bread below is my new favorite bread. It is soft and fluffy like white bread.
It is Northern Bakehouse millet chia bread. I highly recommend it.
Veggie Sandwich with Basil Pesto Hummus
Ingredients
- 2 pieces of gluten free bread toasted - I used brown rice
- 2 tablespoons basil pesto hummus
- 2 thin slices of cucumber
- 2 thin slices of red onion
- 2 thin slices of tomato
- 1/4 of a roasted red pepper sliced
- baby spinach
- 1 teaspoon chopped basil optional
Instructions
- Spread basil pesto hummus on toasted bread.
- Layer on cucumber, red onion, tomato, roasted red pepper, spinach, and chopped basil.
