Being a food blogger, it's funny how some recipes can get you really excited, while others you put off until the last minute. I was really excited to make these Fudgy No-Bake Brownies.
Not only do I love chocolate, but I love brownies. Being the no-bake variety, these are really easy to make.
I made these healthy brownies many years ago with slightly different ingredients, so I knew I would like them.
These are sweet, rich, and addictive. They'll satisfy your chocolate craving. The best part is unlike traditional brownies, you don't need an oven.

🧾 Ingredients
Brownies
- Almond flour: Binds the batter together and adds a nutty flavor. You could also use oat flour.
- Raw cacao powder: Adds a chocolate flavor. You could also use unsweetened cocoa powder.
- Walnuts: Balances out the sweetness. You could also use pecans, almonds, or other types of nuts, or leave them out.
- Dates: Adds natural sweetness and binds the dough together. They're a healthy alternative to refined sugar. You could use Medjool dates or Deglet Noor dates. I have not tried this recipe with date paste, but I'm guessing even by excluding the water in this recipe, it will be too liquidy. If you have extra dates, make some Vegan Caramel Coffee Creamer.
- Vanilla extract: Enhances flavors.
- Almond extract: Adds a fruity flavor. You can leave it out.
- Water: To help the mixture come together. You could also use almond milk, coconut milk, or other dairy-free milk.
- Salt: Enhances sweetness. I like to use sea salt.
Chocolate Frosting
(You could use chocolate chips, dark chocolate baking chunks, or melted chocolate instead.)
- Cacao powder (or cocoa powder): Adds a chocolate flavor.
- Maple syrup: Adds sweetness. You could also use agave syrup.
- Coconut oil: Adds a coconut taste and becomes solidified when refrigerated.

🔪 Instructions
Step 1: Add cacao powder, almond flour, and half the walnuts to a food processor.
Step 2: Mix the dry ingredients until it resembles a course flour.
Step 3: If you don't have soft dates, soak them in hot water first. Add the soaked dates, vanilla extract, almond extract, water, and salt to the dry mixture.
Step 4: Mix until a dough ball forms, and add the rest of the walnuts.
Step 5: Mix until walnuts are incorporated.
Step 6: Oil a baking dish with coconut oil, or line it with parchment paper, then spread the brownie mixture into the baking dish.
Step 7: Add all the frosting ingredients to a small bowl.
Step 8: Whisk until smooth and creamy.
Step 9: Spread the frosting on the vegan date brownies.
Step 10: Sprinkle chopped walnuts on top, pressing them into the frosting. Refrigerate.
💭 Tips
- If your dates have hardened, soak them in hot water before adding them to the mixture.
- Mix the brownie ingredients until they form a ball. That ensures the mixture will be a moist ooey-gooey consistency. Then add the second portion of walnuts so that there are some crunchy bits.
- Oil your baking dish with coconut oil to get the brownies out easier.
- Store brownies in the refrigerator. The frosting has coconut oil, so it melts at room temperature.
- Change up the recipe to include your favorite nuts. Add coconut flakes for flavor and texture.

Fudgy No-Bake Brownies with Dates

Brownies
- 1 cup almond flour / meal
- ¾ cup cacao powder or cocoa powder
- ¾ cup walnuts, divided
- 1 ½ cups pitted dates
- ½ teaspoon vanilla extract
- ¼ teaspoon almond extract (optional)
- 2 tablespoons water
- Pinch (or 2) salt
Chocolate Frosting
- ¼ cup cacao powder
- ¼ cup maple syrup or agave syrup
- ¼ cup coconut oil + more for oiling the baking dish
- ¼ cup chopped walnuts
Instructions
Brownies
- Mix cacao powder, almond flour and ½ cup of the walnuts in a food processor until the mixture resembles a course flour.
- Then add the rest of the ingredients except the rest of the walnuts and mix. If your dates are hard, soak them in hot water before adding them to the mixture.
- After all the ingredients come together in a ball and are moist, add the ¼ cup of walnuts and pulse so that you have chunks of walnuts in the brownies.
- Oil a baking dish with coconut oil, then spread the brownie mixture into the baking dish. Put in the refrigerator while you mix the frosting.
Chocolate Frosting
- Mix all ingredients except walnuts until smooth and creamy. Use food processor if necessary.
- Spread frosting on brownies. Sprinkle chopped walnuts on top, pressing them into the frosting. Refrigerate.
