    Vegan Peanut Butter Swirl Brownies

    These rich, moist, fudgy Vegan Peanut Butter Swirl Brownies have a gooey sweet peanut butter swirl to make the ultimate sweet treat!

    My go-to comfort dessert during these many months of craziness has been brownies. I have made quite a few versions, but I think these are my all-time favorite so far.

    If you don't want to wait for the brownies to bake, try my Edible Gluten Free Brownie Batter. They are made with almond flour, so you don't even have to heat treat the flour!

    In addition to comforting chocolate brownies, I have been shopping online more than ever. I have bought a bunch of vegan handbags, as well as other fun things.

    These fudgy brownies are sure to be a hit. You may want to make a double batch since they are so addictive!

    🧾 Ingredients

    Brownies

    • Black beans: Add a moist texture.
    • Peanut butter: I used all-natural peanut butter. You could use shelf-stable peanut butter. You could also use almond butter or cashew butter.
    • Almond flour: You could also use oat flour.
    • Cacao powder (or cocoa powder): Adds a chocolaty flavor.
    • Maple syrup: Adds sweetness. You could also use agave syrup.
    • Baking powder: Adds lift to the brownies.
    • Vanilla extract: Enhances flavors.
    • Salt: Enhances sweetness. I like to use sea salt.
    • Chocolate chips: You could also use dark chocolate baking chunks.

    Peanut Butter Swirl

    • Peanut butter: I used all-natural peanut butter. You could use shelf-stable peanut butter. You could also use almond butter or cashew butter.
    • Sweetened condensed coconut milk: Adds a sweet, rich creamy flavor. You could also use sweetened condensed oat milk, which I used when I updated this recipe. Maple syrup or agave syrup would also work.

    🔪 Instructions

    Collage photo with ingredients in a food processor before and after blending and chocolate chips added. Then mixture in a baking dish. Lastly peanut butter and sweetened condensed oat milk in a saucepan.

    Step 1: Add black beans, peanut butter, maple syrup, cacao powder, almond flour, baking powder, vanilla extract, and salt to a food processor.

    Step 2: Mix until blended. Fold in chocolate chips, reserving ¼ cup to sprinkle on top.

    Step 3: Spread the brownie mixture into an oiled or parchment-lined baking dish.

    Step 4: To make the peanut butter swirl, add peanut butter and sweetened condensed coconut milk to a saucepan over medium heat.

    Step 5: Heat until well combined.

    Step 6: Swirl the peanut butter mixture into the brownie mixture.

    Step 7: Sprinkle the rest of the chocolate chips on top, and push them into the mixture.

    Step 8: Bake until the toothpick comes out clean and browned on the edges.

    💭 Tips

    • If you like moist rich fudgy brownies, this recipe is for you. If you prefer cakey brownies, these brownies will be too soft and moist for you.
    • When doing the toothpick test (to check for doneness), keep in mind that there are a lot of chocolate chips, and you could hit one with the toothpick.
    • If you prefer, use a different nut butter or seed butter.
    • Make sure to rinse and drain the black beans. Rinsing removes unwanted salt. Draining is necessary because the beans already add a lot of moisture - you don't need any excess water.
    • As always, taste as you go. You may want more salt than I've included or more chocolate chips.
    • Store in an airtight container in the fridge. They will last about a week if you can control yourself!

    Vegan Peanut Butter Swirl Brownies

    Ingredients

    Brownies

    • 15.5 ounces black beans rinsed and drained
    • ½ cup peanut butter
    • ½ cup superfine almond flour
    • ½ cup cacao powder or cocoa powder
    • 1 teaspoon baking powder
    • ⅓ cup maple syrup
    • ½ teaspoon vanilla extract
    • ½ teaspoon salt
    • ½ cup semi-sweet chocolate chips divided

    Peanut Butter Swirl

    • ½ cup peanut butter
    • ½ cup sweetened condensed coconut milk

    Instructions

    • Preheat oven to 350°F.

    Brownies

    • Mix all ingredients except the chocolate chips in a food processor.
    • Fold in the chocolate chips, reserving ¼ cup.
    • Oil a 7 ½" x 9 ½" (or similar size) baking dish with coconut oil, or line it with parchment paper. Spread mixture into baking dish.

    Peanut Butter Swirl

    • Add peanut butter and sweetened condensed coconut milk into a saucepan over medium heat. Stir to combine. Heat until well combined.
    • Swirl mixture into brownies. Sprinkle the reserved chocolate chips on top.
    • Bake at 350°F for 40-45 minutes. Stick a toothpick in the brownies to test them, keeping in mind you may hit a chocolate chip so it may not appear clean.

    Notes

    Make sure to rinse and drain the black beans. Rinsing removes unwanted salt. Draining is necessary because the beans already add a lot of moisture - you don't need any excess water.
    Store in an airtight container in the fridge. They will last about a week.
