    This sweet Vegan Shamrock Shake is not only better than its namesake, but it's also one of the best vegan shakes I've ever had. Yup, it's that good.

    This shake has just the right amount of mint. It is rich and creamy from coconut milk and sweetened condensed coconut milk.

    It gets its green color from matcha green tea powder and spirulina powder. You could use just one, but I like the color of the two of them combined.

    No, this vegan copycat shamrock shake is not a healthy smoothie. This is a dessert to be enjoyed on special occasions or cheat days, and it's totally worth it.

    This mint milkshake would make a great cocktail. Perfect for a St. Patrick's Day party.

    🧾 Ingredients

    • Sweetened condensed coconut milk: Adds a sweet, rich creamy texture. You could also use sweetened condensed oat milk.
    • Coconut milk: Adds a rich creamy texture.
    • Spirulina and matcha green tea powder: Together add a beautiful green color. You can also use just one or the other. You could also use green food coloring or spinach for the green color.
    • Peppermint extract: Adds a peppermint flavor. You could also use mint extract or fresh mint leaves.
    • Vanilla extract: Enhances flavors.
    • Salt: Enhances sweetness. I like to use sea salt.
    • Almond milk: To thin the ice cream into a shake. You could use your favorite dairy-free milk.

    The container on the left in the photo below is with 1 teaspoon of matcha powder. The container on the right is with 1 teaspoon of spirulina powder.

    If you're going to use spirulina powder, I would use a little less than what's listed. As you can see the spirulina made the ice cream a dark blue-green color.

    Both were taken before blending in a blender, so the speckles you see won't be there in the final product.

    🔪 Instructions

    Ingredients in a food processor before blending.

    Step 1: Add all the ingredients except almond milk to a high-speed blender or food processor.

    Mint mixture in a food processor.

    Step 2: Blend until smooth and creamy. Place in the freezer overnight.

    As you can see in the photo below, the mix of matcha green tea powder and spirulina powder makes a beautiful minty green color. Add in some chocolate chips to make Vegan Mint Chocolate Chip Ice Cream.

    Step 3: Add the mint ice cream and almond milk to a high-speed blender.

    Step 4: Blend until smooth and creamy.

    💭 Tips

    • Freeze the mint ice cream overnight. It takes a long time to freeze because of the high sugar content in the sweetened condensed coconut milk.
    • Then you can mix in the almond milk to your desired consistency.
    • Top with coconut whipped cream, chocolate syrup, chopped chocolate, or whatever you like.

    Equipment

    • high speed blender

    Ingredients

    Mint Ice cream

    • 11.25 ounces sweetened condensed coconut milk (1 cup)
    • 1 cup coconut milk full fat
    • ½ teaspoon matcha green tea powder*
    • ½ teaspoon spirulina powder*
    • ½ teaspoon peppermint extract
    • 1 teaspoon vanilla extract
    • Pinch salt

    Shake

    • ½ cup unsweetened almond milk
    US Customary - Metric

    Instructions

    • Mint Ice cream: Mix all ingredients in a Nutribullet or high speed blender except almond milk. Freeze overnight.
    • Shake: Mix mint ice cream with almond milk.

    Notes

    *You could use all matcha green tea or all spirulina powder, but I like the color of the two of them combined. If you use all spirulina powder, you'll need less than the amount listed.

      OMG!!!!!!!!!!! I love it so much! Willow you are a saint! I just became vegan and when looking for recipes, this is the first one that caught my eye, you are SOOOOO creative! it is amazing how you come up with the delectable treats you do, with the limited vegan supplies available, vegan recipes are all about compromise. this is a must try! I can't wait to try your other recipes! I cannot express how happy you have made me! I became vegan expecting a challenge, no longer eating the things I USED to enjoy, but you changed that, good on you!
