This creamy Edamame Avocado Hummus is easy to make and is cheaper than store-bought! It is perfect for people on a low-carb diet.

I created this Edamame Avocado Hummus because it has a decent amount of protein and is low in carbs. I was eating a high-fat low-carb diet, or vegan keto diet, at the time.
This recipe had the fat that I needed since it contains avocado. Edamame contains less carbs than garbanzo beans, so it was a good choice. Together they make a thick, creamy hummus.
Hummus can be made in about five minutes with mostly pantry staples. I think I have around ten hummus recipes, with more to come. Once I got my base mixture to how I liked it, creating hummus recipes was really easy.
Being vegan and gluten-free can be hard in some social situations. Many get-togethers that I go to don't have much for me to eat. I am always happy to see hummus though. Since it is high in protein, I can easily fill up on it.
Since you can make it ahead of time, it is a hostess' dream come true. I don't know about you, but I love to have some recipes that can be prepared in advance to make the day of the get-together go smoother.

Step 1: Add edamame soybeans, tahini, lemon juice, avocado, garlic, salt, olive oil, and water into a food processor.
