Neapolitan Chia Pudding

This healthy Neapolitan Chia Pudding can be eaten for breakfast or dessert. It is easy to make and great for on the go!

Make Ahead

After I made Strawberry Chia Jam, then a Peanut Butter and Jelly Chia Pudding, I knew a Neapolitan Chia Pudding was in order. Three flavors of chia pudding in one jar – I’m in!

One of the great things about chia puddings is that you can make them the night before. They are quick and easy to make – perfect for weeknights.

Overnight oats are great for making ahead also. I fell in love with them when I made some Chocolate Peanut Butter Overnight Oats for a overnight trip out of town.

Portable

Chia pudding is portable, which is another bonus. Just like my overnight oats, they are great for taking on a trip.

Breakfast can be the hardest meal of the day for a vegan on a road trip. I no longer rely on restaurants because I usually fill up on a fruit bowl and hash browns, only to be hungry an hour or two later. Not to mention I usually need a nap afterwards.

So now I make chia pudding or overnight oats beforehand, and am all set for the road.

Strawberry, Chocolate, and Vanilla – the Perfect Combination

Whoever came up with Neapolitan ice cream was pretty smart, since strawberry, chocolate, and vanilla go so well together.

Neapolitan ice cream is not something that I have eaten very much in my lifetime – before or after becoming vegan. I actually like this chia pudding version better, because when I eat vegan ice cream, it’s usually chocolate.

I have been really into chia puddings lately. There are great for breakfast or dessert. You can’t get much more versatile than that!

Neapolitan Chia Pudding

Ingredients

Chocolate layer

  • 2  tablespoons chia seeds
  • 1/2 cup unsweetened chocolate or vanilla almond milk
  • 2 teaspoons cacao or cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 8 drops stevia

Vanilla layer

  • 2  tablespoons chia seeds
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 teaspoon vanilla extract
  • 8  drops stevia

Strawberry layer

  • 1/2 cup Strawberry Chia Jam
  • 6 chopped strawberries
  • 4 teaspoons cacao nibs
US Customary - Metric

Instructions

  1. Chocolate layer: Mix chia seeds and almond milk. Let sit in the fridge for at least an hour. Mix in cacao powder, vanilla extract, almond extract, and stevia.
  2. Vanilla layer: Mix chia seeds and almond milk. Let sit in the fridge for at least an hour. Mix in vanilla extract and stevia.
  3. To assemble: Divide puddings between two 8 ounce mason jars. Layer into each 1/2 of the chocolate chia pudding, then 1/2 of the vanilla chia pudding. On top of the vanilla chia pudding layer 4 tablespoons Strawberry Chia Jam. Garnish with chopped strawberries and cacao nibs.

    This looks so delicious! I made strawberry chia jam a few weeks ago but was quite disappointed at the sourness. I think it was too early in the season for sweet strawberries.

      If that ever happens again, you could always add more sweetener. Also, frozen is a good way to go because they pick the fruit when they are ripe.

      It was a conscious decision not to have a nutrition plugin on Create Mindfully. When I was counting macronutrients on a vegan keto diet I found that when I used different brands I got very different results. I would hate to show nutrients that messes up someones state of ketosis.
