Compote is a fruit sauce that consists of whole fresh or frozen fruit, water, and sweetener and is cooked on the stove.

- Pour raspberries, water, and agave syrup into a small saucepan. Bring to a boil, stirring occasionally.
- Simmer on medium heat until raspberries break down and sauce thickens.
- Place in a jar or other airtight container and let cool before placing in the fridge.
💭 Tips
- Keep an eye on the compote while it is cooking. It cooks down fast.
- Taste the compote for sweetness. You may want more sweetener than I've listed.
- You can use fresh or frozen raspberries.

This raspberry compote recipe will last up to a week in an airtight container in the fridge. To make it last longer you can add lemon juice, then it will last up to two weeks.
