    Vegan Vanilla Ice Cream

    This creamy no-churn Vegan Vanilla Ice Cream is an easy dessert. Made with vanilla bean and vanilla extract.

    This vegan ice cream comes together quickly and easily. You don't even need an ice cream maker!

    Made with both vanilla bean and vanilla extract, this packs a punch of vanilla. It tastes great eaten by itself or used in a vegan milkshake with mint.

    Homemade ice cream for dessert, yes, please! A similar recipe is my Vegan Chocolate Chip Ice Cream recipe.

    Serve it by itself or with a drizzle of Elderflower Syrup or my Raspberry Compote recipe. Top it with some Glazed Cashews.

    Ingredients

    • 2 cups full fat coconut milk
    • 1 cup sweetened condensed coconut milk (11.25 ounces)
    • 1-2 vanilla bean pods* scraped
    • 2 teaspoons vanilla extract
    • Pinch salt

    Instructions

    • Mix ingredients in a blender or food processor.
    • Pour into an airtight container and freeze.

    Notes

    *Vanilla bean is an expensive item so you may want to use less.
    An 11.25-ounce can of Nature's Charm sweetened condensed coconut milk has 1 cup of Sweetened condensed coconut milk in it, so you'll use the whole can.
    If you use another brand or homemade, make sure to measure 1 cup.
    This recipe will last up to a month in an airtight container in the freezer.
