    This easy no-churn Vegan Chocolate Ice Cream is a rich and creamy treat! Made with sweetened condensed coconut milk to add sweetness.

    This Vegan Chocolate Ice Cream is super rich and creamy. I would say it's venturing into fudgy brownie territory.

    You won't find any bananas in this vegan ice cream. It is sweet and indulgent.

    Did I mention that this chocolate ice cream is no-churn? It's true. There's no special equipment needed to make this sweet treat.

    The real magic happens when you add the cacao powder. It adds a dark chocolaty flavor that rivals fudgy brownies.

    Once you dip your spoon (or finger) in the mix, you'll be tempted to eat it then and there, like cookie dough.

    You might want to hide it in the back of the freezer so that you can indulge in this heavenly dessert all by yourself. Just sayin'.

    Eat it by itself or with my Raspberry Compote recipe. Add some walnuts and vegan marshmallows for some Vegan Rocky Road Ice Cream.

    🔪 Instructions

    Step 1: Place a heat-proof bowl over a saucepan filled with water (or use a double boiler). Pour the chocolate chips into the bowl over medium heat.

    Step 2: Stirring constantly, heat the chocolate mixture until smooth and melted. Turn off the heat.

    Step 3: Add the rest of the ingredients.

    Ingredients

    • 1 cup semi-sweet chocolate chips
    • 1 ½ cups coconut milk
    • ½ cup sweetened condensed coconut milk (½ of an 11.25 ounce can)
    • ½ cup cacao powder (or cocoa powder)
    • 1 teaspoon vanilla extract
    • Pinch salt

    Instructions

    • Place a heat proof bowl over a saucepan filled with water (or use a double boiler). Pour the chocolate chips in the bowl over medium heat.
    • Stirring constantly, heat chocolate mixture until smooth and melted. Turn off heat.
    • Add coconut milk, sweetened condensed coconut milk, cacao powder, vanilla extract, and salt. Mix well and freeze.

    Notes

    *When melting the chocolate chips make sure the bowl isn't touching the water. You want the steam to heat the bowl and melt the chocolate.
    Alternatively, you can heat chocolate chips in the microwave at 30-second intervals until melted. Just make sure to not get any liquid in the container. 
    An 11.25-ounce can of Nature's Charm sweetened condensed coconut milk has 1 cup of Sweetened condensed coconut milk in it, so you'll use half the can.
    If you use another brand or homemade, make sure to measure ½ cup.
    This recipe will last up to a month in an airtight container in the freezer.

            Thanks Melanie! I don’t own an ice cream machine. (I don’t have room for another gadget!) The mint chocolate chip ice cream is definitely pinnable, it probably was taking awhile to load.
