    This Spicy Cashew Dressing is sweet, savory, and spicy with a bright fresh flavor from cilantro. Use it on salads and spring rolls, or as a dipping sauce.

    The inspiration for this Spicy Cashew Dressing came from my Peanut Sauce recipe, which has similar ingredients, minus a couple.

    I hate to play favorites, but I think I like this one better. It's probably because I added ginger and cilantro. The combo takes this dressing to a whole other level.

    I first made it without, and I knew immediately it needed both ingredients. The ginger adds a warm heat, and the cilantro adds a bright note.

    The next time I make my peanut sauce I'll have to add ginger and cilantro to see how it compares.

    ❤️ Why You'll Love It

    • It's super easy to make and goes well on salads, with spring rolls or as a dipping sauce.
    • It's out-of-this-world good! Seriously, you've gotta try it.
    • It adds an Asian-inspired flavor to anything you eat with it.

    🧾 Ingredients

    • Raw cashews: Adds the creamy, nutty base for the dressing.
    • Cilantro: Adds a bright flavor. If you're one of those people who have the gene that makes cilantro taste like soap, leave it out. Otherwise, I highly recommend using it.
    • Ginger: Adds a warm spicy flavor.
    • Water: Thins out the dressing.
    • Brown rice vinegar: Adds a tangy flavor. You could also use lime juice or even mirin.
    • Tamari: I used low sodium gluten free tamari because I like to control the amount of sodium. You could also use soy sauce, Bragg's liquid aminos or coconut aminos. You'll see there's no salt added. That's because tamari provides a good amount already.
    • Sweet red chili sauce: Adds a sweet and spicy flavor.
    • Sriracha sauce: Adds more spice. Adjust to your liking.

    🔪 Instructions

    Ingredients in a Nutribullet before blending.

    Step 1: Place all ingredients in a high speed blender or Nutribullet.

    Step 2: Blend until smooth and creamy. Refrigerate to thicken.

    Spicy Cashew Dressing

    Ingredients

    • ½ cup raw cashews
    • 1 tablespoon low sodium gluten free tamari
    • 1 tablespoon brown rice vinegar or lime juice
    • 2 tablespoons sweet red chili sauce
    • 1 teaspoon sriracha sauce
    • ¼ cup cilantro
    • ½ teaspoon chopped fresh ginger
    • ½ cup water + more for soaking cashews

    Instructions

    • Soak raw cashews in hot water for 15 minutes to an hour. Drain water.
    • Add all ingredients to high-speed blender. Blend until smooth and creamy. Let sit for a few hours in the fridge to thicken.

    Notes

    This recipe will last about 5 days in an airtight container in the fridge.
