These Vegan Strawberries and Cream Popsicles are a healthy way to cool off. No special equipment required!

These Vegan Strawberries and Cream Popsicles came about as many recipes do, a need to use up an ingredient. In this case, it was strawberries.
I swear they start to turn the minute I take them out of the store. I mostly use them in my morning smoothies, but it seems like I can never use them up fast enough. That's why I prefer frozen fruit for smoothies. I can use them at my own pace.
Since it has been so hot, it's nice to have a cool treat to cool off. Other recipes to cool off with are a Strawberry Coconut Dessert, a Strawberry Shrub Drink, or a Strawberry Milkshake without Milk.

You won't need popsicle molds for these. I had some popsicle molds many years ago but got rid of them because I never used them. Now that I am a food blogger, I regret that decision.

🔪 Instructions
Step 1: Place all the ingredients into a food processor, high-speed blender, or Nutribullet.
Step 2: Blend until smooth and creamy. If you want some strawberry chunks you could use the pulse setting.
Step 3: Pour mixture into bath cups or molds.
Step 4: Place popsicle sticks into each mold.
💭 Tip
To get the popsicles out of the mold easily, run them under warm water or stick them in a shallow container with warm water.

Vegan Strawberries and Cream Popsicles
Equipment
- 6 Popsicle sticks
- 6 (3 ounce) bath cups or popsicle molds
Ingredients
- 13.5 ounces full fat coconut milk
- 1 teaspoon vanilla extract
- 1 cup chopped strawberries
Instructions
- Pulse all ingredients in a Nutribullet or food processor to leave strawberries a little chunky, or mix well to purée.
- Pour into 3 ounce bath cups. Put a popsicle stick into each one and freeze until solid.
