    These keto Sugar Free Mounds Bars are a great snack for people on a low carb or vegan keto diet.

    These Sugar Free Mounds Bars are a healthy treat you'll feel good eating. They are sugar free and have minimal ingredients. Another low carb treat you'll feel good about eating is my Low Carb Vegan Almond Cookies.

    These Mounds Bars help you meet your macro nutrient goals on a vegan keto or ketogenic diet plan. If you aren't on a vegan diet keto diet, they can easily be made with sweetener.

    This keto Mounds bar recipe is easy and fun to make. They could easily be made with your kids.

    ❤️ Why You'll Love Them

    • They're sugar free, but can easily be made with sweetener.
    • They're perfect for low carb, sugar free, and keto diets.
    • They're a healthy snack that you can feel good eating.

    🧾 Ingredients

    • Shredded coconut: If you can't find shredded coconut at your local grocery store, you can shred coconut chips in a coffee grinder or Nutribulet with the milling blade.
    • Coconut milk: Adds a rich creamy coconut flavor. I used full-fat coconut milk from a can.
    • Stevia: Sweetens the mounds bars without adding sweetener. You could use another sugar-free sweetener, maple syrup, agave syrup, or your favorite sweetener.
    • Vanilla extract: Enhances flavors.
    • Salt: Enhances sweetness. I like to use sea salt.
    • Cacao powder (or cocoa powder): For coating the bars. You could also use sugar-free chocolate chips, regular chocolate chips, or dark chocolate baking chunks. If you do, you won't need coconut oil or the rest of the coating ingredients.
    • Coconut oil: For mixing with the cacao powder. Helps to harden the chocolate on the bars. If you use chocolate chips you won't need coconut oil.

    🔪 Instructions

    Step 1: Add coconut milk, shredded coconut, stevia, and salt into a large mixing bowl.

    Step 2: Mix until combined. Refrigerate so that it's easier to form bars.

    Step 3: Form bars and freeze solid.

    Collage offers  next  to bowl  of  chocolate  sauce, then bar dipped into  sauce, and all bars on a parchment lined tray.

    Step 4: Add cacao powder, coconut oil, vanilla extract, and stevia into a large mixing bowl. Whisk to get the clumps out.

    Step 5: Dip bars one by one into the chocolate and place them on parchment paper.

    Step 6: Place in the fridge or freezer.

    Sugar Free Mounds Bars

    These keto Sugar Free Mounds Bars are a great snack for people on a low carb or vegan keto diet.

    Ingredients

    Filling

    • 13.5 ounces coconut milk (full fat)
    • 2 cups finely shredded coconut
    • 15 drops stevia
    • Pinch salt

    Coating

    • ¾ cup cacao powder (or cocoa powder)
    • ¾ cup coconut oil
    • 30 drops stevia
    • 1 ½ teaspoons vanilla extract

    Instructions

    Filling

    • Mix coconut milk, finely shredded coconut, stevia, and salt. Refrigerate 1 hour so that it's easier to make bars.
    • Make bars and place in freezer 1 hour to overnight.

    Coating

    • Mix cacao powder, coconut oil, stevia, and vanilla extract.* Take bars out of the freezer and one by one place in the coating. Place each bar on parchment paper and freeze. Store in the fridge or freezer.

    Notes

    * The coating just coats all the bars. If you use even a bit more chocolate on each you'll need more than the recipe calls for. In that case you could use 1 cup cacao powder, 1 cup coconut oil, 40 drops stevia, and 2 teaspoons vanilla.
    To make them with sweetener, use 2-3 tablespoons of maple syrup or agave syrup in the filling in place of stevia, and use regular chocolate chips melted in a double boiler or the microwave in place of the coating ingredients.

      Is there a room temperature version? Perhaps add eggs and coconut flour or Wheat Belly All Purpose Flour? Is that liquid or solid coconut oil. Liquid should have more MCTs.
