This Vegan Cauliflower Pizza Crust is healthy and full of flavor. You can't even taste the cauliflower in it.
Once you add toppings, it tastes similar to a traditional pizza crust. It's a wonderful way to sneak in some veggies.

🧾 Ingredients
- Cauliflower: I used fresh cauliflower florets. You could also use frozen store-bought cauliflower rice if you have that.
- Flour: I used gluten-free all-purpose baking flour. You could use regular flour.
- Ground flax seeds: Acts as a binder. You can grind flax meal in a coffee grinder or Nutribullet with the milling blade. You could also use ground chia seeds.
- Nutritional yeast: Adds a cheesy flavor. You could leave it out.
- Basil, oregano, onion powder, and garlic powder: Add flavor. You could also use Italian seasoning.
- Olive oil: Also binds the dough.
- Salt and pepper: Enhances flavors and adds flavor. I like to use sea salt.

🔪 Instructions
Step 1: Chop cauliflower and place it in a steamer in a saucepan with a few inches of water. Steam cauliflower until tender. Let cool.
Step 2: Place the cooked cauliflower in a clean kitchen towel, nut milk bag, or cheesecloth. Squeeze out the excess water.
Step 3: Place the cauliflower in a food processor with the rest of the ingredients. Mix until incorporated.
Step 4: Spread dough onto an oiled parchment paper-lined baking pan or baking sheet. Bake cauliflower crust until it starts to turn golden brown.
Add tomato sauce, pizza toppings, and dairy-free cheese on top of the pizza crust and bake for about 5 minutes more. Cut into slices.
♨️ Reheating
The best way to reheat the vegan pizza crust is on a low setting in the oven. You could also reheat it in the microwave, but it won't be as crispy.

💭 Tips
- Make sure to squeeze out the excess liquid from the steamed cauliflower. It will measure about 1 cup worth afterward.
- Bake the crust before adding the toppings. That way it will crisp up. After you've baked it until it has started to brown, add your desired toppings and bake until the toppings are heated through.

Vegan Cauliflower Pizza Crust
Equipment
Ingredients
- 2 ½ cups cauliflower florets (½ head)
- 3 tablespoons ground flax seeds
- 1 teaspoon basil
- 1 teaspoon oregano
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 tablespoons nutritional yeast
- 1 tablespoon olive oil + more for oiling baking sheet
- Salt and pepper
- ½ cup gluten free all purpose baking flour
Instructions
- Preheat oven to 400°F.
- Steam cauliflower 10-15 minutes until tender. Let cool.
- In a cheesecloth or kitchen towel, squeeze out as much water as you can. This will shrink the amount of cauliflower to about 1 cup.
- Put cauliflower and the rest of ingredients in a food processor and mix thoroughly.
- Spread ingredients onto an oiled parchment paper lined baking dish or sheet pan. With slightly wet hands (dough is sticky), spread out the dough to about ¼" thick, pressing the dough in firmly.
- Bake at 400°F for 20 minutes.
- Add your toppings and cook for about 5 minutes, or store in the fridge and use within a few days.

The last time that I attempted, I put emphasis on attempted, cauliflower pizza I did something horribly wrong. It was gooey, bland, and just plain unappetizing. I think that I didn't squeeze the water out and I definitely didn't double bake it. I am going to have to try again!

It definitely helps to squeeze the water out, although I did it both ways and without squeezing the water out is more like a flatbread. You'll notice the amount of cauliflower shrunk by half, which is substantial! It also helps to add herbs to flavor it. I like nutritional yeast too because it gives a "cheesy" flavor. Also, this dough is a little sticky because of the flax meal, which is why it is good to wet your hands so they don't stick to the dough.
