For my last post of the year, I decided to share something that makes me think of the holidays. This Mint Chocolate Coffee Creamer has been part of my morning routine lately.
Before making this creamer, I was enjoying my morning coffee with just coconut milk.
Since I love flavored coffee, I figured 'tis the season to turn my daily coconut milk into Mint Chocolate Coffee Creamer.
After blending and refrigerating, this has a thick, frothy, creamy texture, like whipped cream. If you prefer a thin creamer, you could always add more almond milk.
Since it has the consistency of whipped cream, you could top it on your favorite dessert or add it to a cocktail.

- Coconut milk: I used full-fat coconut milk. Light coconut milk would also work.
- Almond milk: I used unsweetened almond milk to control the amount of sweetener. You could use any dairy-free milk you like.
- Cacao powder (or cocoa powder): Adds chocolate flavor.
- Peppermint extract: Adds minty flavor. You could also use mint extract.
- Stevia: I used stevia to make it sugar-free. You could also use maple syrup, agave syrup, or your favorite sweetener.

- ½ cup unsweetened vanilla almond milk
- ¼ teaspoon peppermint extract
- 2 tablespoons cacao powder
- 5 drops stevia
Instructions
- Mix all ingredients in a high speed blender or Nutribullet.
