This healthy BBQ Lentil Sandwich with Sriracha Coleslaw is sure to please even the pickiest eaters. It is an easy filling meal that is perfect for a picnic or other outdoor gathering.
Sweet and spicy lentils on your favorite bread or buns with creamy sriracha coleslaw - what's not to love?
The BBQ lentils are made with a 4 ingredient sriracha BBQ sauce that doesn't need to be cooked to make it, so there's no excuse not to use it. Then the lentils and the BBQ sauce are added to the cooked onions. Since they are orange lentils, they cook up pretty fast.
The spicy Sriracha Coleslaw comes together quickly as well since a coleslaw mix is used in it. All you have to do is mix the dressing. Easy, right?
You could also serve this sandwich with some Homemade Habanero Mango Salsa.
Toast some buns and assemble them, and you have a hearty meal. I used Pamela's pizza mix to make the buns. I love the taste and it is slightly cheaper than the only vegan gluten-free buns that I have found, which are ener-G hamburger buns.
The ener-G buns are good, but I prefer the taste of Pamela's pizza mix. When I am in a pinch, I use ener-G buns.
Tips
- Make the 4 Ingredient Sriracha BBQ Sauce the day before to make things easier on yourself.
- Make the Sriracha Coleslaw the day before and refrigerate it overnight. The juices from the veggies will add flavor to the dressing. If you prefer a less liquidy slaw, make it 30 minutes before the sandwiches.
- The amount of coleslaw listed is just enough for the sliders. Make a whole batch to give yourself leftovers for a light lunch.
- Taste the coleslaw dressing as you make it. You may want more or less sugar and sriracha sauce.
- The type of buns that you use makes a big difference in the overall taste of the vegan sliders. Not to mention, by using Pamela's pizza mix, I could only eat one slider because it was so filling. The buns are quite hearty.

BBQ Lentil Sandwich with Sriracha Coleslaw
Ingredients
- 1 cup dry orange lentils also known as red lentils
- 2 cups water
- ½ cup chopped onion
- 1 tablespoon olive oil
- 4 Ingredient Sriracha BBQ Sauce - the whole batch
- Sriracha Coleslaw - half the batch
- Gluten free buns - I used Pamela's Pizza MixÂ
Instructions
- Put lentils and water in a pan over medium high heat. Bring to a boil. Reduce to a simmer and cook for 15 minutes. Add more water, if needed. Remove from heat.
- Heat a pan on medium heat. Add onions and sauté until translucent. Add cooked lentils and 4 Ingredient Sriracha BBQ Sauce. Cook until heated through.
- Serve on toasted buns with Sriracha Coleslaw.
