    BBQ Mushroom Sandwich

    This BBQ Mushroom Sandwich is balanced with sweet and spicy flavors. Made in about 20 minutes, it is an easy weeknight meal!

    Mushrooms are elevated to another level in this BBQ Mushroom Sandwich. BBQ seasoning and BBQ sauce transform mushrooms with sweet, smoky, and spicy flavors.

    This vegan BBQ sandwich is a great alternative to pulled pork. It is hearty and comforting.

    Top it with coleslaw or sliced pineapple. I like it with pineapple because it balances out the spicy flavors nicely.

    ❤️ Why You'll Love It

    • It's made in less than 20 minutes, making it an easy weeknight meal.
    • It is warm and comforting.

    🧾 Ingredients

    • Baby Bella Mushrooms - I used baby bella mushrooms because they're hearty, flavorful, and pair nicely with BBQ flavors.
    • Onions - Add a ton of flavor and pair wonderfully with mushrooms.
    • Garlic - Adds a punch of flavor.
    • Homemade BBQ Seasoning - Made with chipotle powder, brown sugar, and spices, this BBQ seasoning is sweet and spicy. It also tastes great on my Crispy BBQ Roasted Chickpeas and my BBQ Kale Chips recipe.
    • 4 Ingredient Sriracha BBQ Sauce - Made with pantry staples, this is my go-to BBQ sauce. It has a balance of sweet and spicy flavors. I also used it in a Vegan BBQ Sandwich with Lentils.

    🔪 Instructions

    Mushrooms in pan before and after cooking.

    Step 1: Cook onions until translucent.

    Step 2: Add the garlic and cook for 30 seconds.

    Step 3: Add mushrooms. Stir and cook for about 5 minutes.

    Step 4: Add BBQ seasoning, salt, pepper, and BBQ sauce. Stir to combine. Cook a couple more minutes.

    💭 Tips

    • Add salt at the end of cooking. Salt brings out moisture in the mushrooms.
    • Don't clean mushrooms until you're ready to cook them.
    • I like to wipe them with a damp towel. Keep in mind they soak up water and can get waterlogged, so if you wash them make sure to dry them completely.

    • Sliced avocado
    • Sliced pineapple or mango

    BBQ Mushroom Sandwich

    Ingredients

    • 1 tablespoon olive oil
    • 1 cup chopped onion
    • 1 clove garlic minced
    • 8 ounces baby bella mushrooms (3 cups sliced)
    • 1 tablespoon BBQ seasoning
    • Salt and pepper
    • ¼ cup 4 ingredient sriracha BBQ sauce

    For Serving

    • 3 buns
    • 4 ingredient sriracha BBQ sauce (optional)
    • Sliced pineapple (optional)
    • Cilantro (optional)

    Instructions

    • Wipe mushrooms, trim the stems, and slice. Then slice in half. Set aside.
    • Heat olive oil in a large pan on medium heat. Add onions. Cook until translucent, about 5 minutes.
    • Add garlic. Cook 30 seconds.
    • Add sliced mushrooms. Cook about 5 minutes.
    • Add BBQ seasoning, salt, pepper, and BBQ sauce. Stir and cook for a couple of minutes or so.
    • Assemble sandwiches with BBQ mushrooms, sliced pineapple, and cilantro.

    Notes
