    Buffalo Tofu Salad

    This vegan Buffalo Tofu Salad has spicy buffalo tofu, ranch roasted chickpeas, and hemp ranch dressing. It's perfect for lunch!

    This Buffalo Tofu Salad is a hearty meal. It's got spicy buffalo tofu that's crispy on the outside.

    Then there's crunchy ranch roasted chickpeas and a homemade hemp ranch dressing to cool things off.

    🧾 Ingredients

    Hemp ranch dressing on a cutting board with labels.
    • Lettuce: Use any lettuce mix you like.
    • Celery: Adds a nice crunch and goes well with the other flavors. Sliced cucumber would be a nice addition also.
    • Ranch roasted chickpeas: Made with chickpeas, olive oil, nutritional yeast, and spices. They add crunch and another layer of ranch flavor. You could leave them off.
    • Buffalo tofu: Made with tofu, hot sauce, vegan butter, olive oil salt, pepper, and cornstarch or tapioca flour. It adds a spicy hearty element to the salad.
    • Hemp ranch dressing: I used homemade ranch dressing made with hemp hearts, nutritional yeast, soy milk, lemon juice, and spices. You could use my Vegan Ranch Dressing recipe or store-bought vegan ranch instead.

    🔪 Instructions

    Vegan butter in a saucepan with hot sauce, then being melted and cooked through.

    Buffalo Tofu

    Step 1: Add the hot sauce and vegan butter to a skillet.

    Step 2: Cook until the vegan butter is melted. Set aside.

    Step 3: Coat tofu in cornstarch.

    Step 4: Fry in oil until golden brown.

    Step 5: Spread a few tablespoons of the hot sauce mixture on tofu and cook a few minutes more.

    Hemp Ranch Dressing

    Mix soy or almond milk with hemp hearts, dried parsley, dried dill, onion powder, garlic powder, nutritional yeast, paprika, lemon juice, and salt and pepper in a high speed blender or Nutribullet.

    Ranch Roasted Chickpeas

    Step 1: Dry chickpeas and remove as many of the skins as possible with a clean towel.

    Step 2: Roll the towel over the chickpeas and the skins will come off and the chickpeas will get dried off at the same time.

    Ranch seasoning in a bowl, then roasted chickpeas added.

    Step 3: Mix the chickpeas with olive oil and roast until they are crispy. Immediately mix with ranch seasoning, which is made up of dried parsley, dried dill, nutritional yeast, onion powder, garlic powder, and salt.

    Layer lettuce in a bowl with chopped celery, ranch-roasted chickpeas, and buffalo tofu. Pour hemp ranch on top.

    For this recipe, I used vegan butter and hot sauce.

    Hot sauce usually consists of chile peppers, vinegar, and salt.

    Buffalo Tofu Salad

    This vegan Buffalo Tofu Salad has spicy buffalo tofu, ranch roasted chickpeas, and hemp ranch dressing. It's perfect for lunch!

    Ingredients

    • 4 cups lettuce mix
    • 1 stalk celery chopped
    • ½ cup ranch roasted chickpeas
    • ⅓ of the buffalo tofu recipe*
    • ¼ cup hemp ranch dressing

    Instructions

    • Layer lettuce in a bowl with chopped celery, ranch roasted chickpeas, and buffalo tofu.
    • Pour hemp ranch on top.

    Notes

    *When making the buffalo tofu, you may want to cut the tofu into cubes instead of slabs like the recipe calls for.
    I suggest putting the salad together right before eating it. If you need to pack a lunch, store the chickpeas separately so that they don't get soggy.
    The tofu and dressing will last about 5 days (in separate containers) in the fridge. The chickpeas will last 2 weeks to a month when stored in an airtight container at room temperature.
