After breaking my ankle back in October, I realized how invaluable easy recipes are. Sure, I have always loved to make easy recipes when I don't feel like cooking, but when something like an injury happens and easy recipes become a necessity, it changes everything.
At first, I was in a wheelchair. Cooking was slightly inconvenient because my kitchen isn't set up for a wheelchair. But then I switched to a walker and standing for long periods of time was out of the question. I made quick and easy recipes to get by.
This Spicy Hummus Tortilla Pizza was one of the recipes that I created after being injured. I love pizza in general, but when I don't have time to make the pizza crust, a tortilla is the perfect solution.
Since a tortilla is so thin, you don't get all the carbs of a regular pizza crust. It is like eating a tostada except it's larger and made of brown rice flour instead of corn.
If you have never had warmed hummus on a pizza, you are on for a treat! It is something you must try. I mixed the spicy hummus with a little marinara sauce to give a pizza flavor.
I love how the hummus adds a filling protein. It is perfect for when you feel like a veggie pizza.
Ever since being introduced to a vegan pizza with tomatoes and broccoli, I have been eating that combo on pizza. Not only do I like the combination, but they are two items that I usually have stocked.

Spicy Hummus Tortilla Pizza
Ingredients
- 1 gluten free tortilla - I used brown rice
- ¾ cup broccoli
- 2 tablespoons Spicy Red Pepper Hummus
- 3Â tablespoons marinara sauce
- ½ tomato  sliced
- 1 tablespoon sliced onion
- Nutritional yeast optional
- Red pepper flakes optional
Instructions
- Preheat oven to 325°.
- Steam broccoli until tender.
- Bake tortilla for 3 minutes until slightly crispy.
- Spread Spicy Red Pepper Hummus on tortilla. Top with marinara sauce. Add steamed broccoli, sliced, tomato, and sliced onion. Bake for 4 minutes, or until crispy.
- Sprinkle nutritional yeast and red pepper flakes on top, if desired.
