These Vegan Peanut Butter Balls are truly difficult to put down! They are made with the same ingredients as buckeyes (in vegan form).
The difference is these are dipped completely in chocolate instead of partially.
You don't really need a hand mixer for this recipe, although you could certainly use one. I used a pastry cutter to break up the vegan butter.
You could also melt the vegan butter for easier mixing.

- Powdered sugar: Dissolves into the peanut butter and adds sweetness.
- Vanilla extract: Enhances flavors.
- Salt: Enhances flavors.
- Chocolate: I used vegan dark chocolate baking chunks. You could also use vegan chocolate chips.

💭 Tips
- I used natural peanut butter for this recipe. Since there is a decent amount of vegan butter in these, you can get away with using all-natural peanut butter.
- After mixing the peanut butter filling, place it in the fridge so that it's easier to roll into balls.
