This sweet Chocolate Coconut Chia Pudding is made with rich coconut milk and layered with chocolate almond butter.

I love chocolate, but what I love even more is chocolate, coconut, and almonds together. This Chocolate Coconut Chia Pudding was inspired by my Chocolate Almond Butter, which I love to eat by the spoonful, and I have included it in this recipe.
This easy chocolate chia pudding is made with full-fat coconut milk and layered with chocolate almond butter. Add some fresh fruit or your favorite toppings for a healthy dessert.
Chia seeds get gelatinous when liquid is added to them, so they make a wonderful base for puddings, like my Vegan Neapolitan Pudding recipe. They are high in fiber and low in carbs.
If you make this with stevia and either omit the chocolate almond butter or use very little of it, this becomes a vegan keto chocolate chia seed pudding recipe. You could also replace the maple syrup with stevia in the chocolate almond butter.
I blended the chia seeds with the rest of the ingredients, which gives this pudding a traditional pudding consistency and texture. The texture of chia seeds in pudding can take some getting used to if you are trying it for the first time.

- Whole chia seeds: Get gelatinous in liquid. I buy chia seeds at my local grocery store. You can also buy them online. Costco even carries them.
- Coconut milk: I used full-fat canned coconut milk. You could also use light coconut milk, unsweetened almond milk, or another non-dairy milk.
- Raw cacao powder (or unsweetened cocoa powder): Adds the chocolate flavor.
- Almond extract: Adds a fruity taste. You could leave it out.
- Vanilla extract: Enhance flavors.
- Pure maple syrup: Adds sweetness. You could also use agave syrup, date paste, or coconut sugar. To make it sugar-free, use stevia, monk fruit, or your favorite sugar-free sweetener.
- Chocolate almond butter: Adds a creamy chocolate almond flavor. I used homemade chocolate almond butter. You could also use store-bought chocolate almond butter or leave it out. You could also top the pudding with chocolate chips or cacao nibs.
- Salt: Enhances sweetness. I like to use sea salt.

Step 1: Add chia seeds and coconut milk to a bowl. Mix and let sit for at least an hour.
Step 2: Mix and let sit for at least an hour.
Step 3: Pour mixture along with the rest of the ingredients into a high-speed blender or Nutribullet.
Step 4: Mix until smooth and creamy. Layer the chocolate chia pudding with chocolate almond butter in a bowl.

Chocolate Coconut Chia Pudding
Equipment
Ingredients
- ยผ cup chia seeds
- 1 cup full fat coconut milk or unsweetened almond milk or a combination of the two
- 2 tablespoons cacao powder
- ยฝ teaspoon almond extract (optional)
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup or 10 drops stevia
- 2-3ย tablespoons Chocolate Almond Butter*
Instructions
- Add coconut milk or almond milk to chia seeds. Let sit in the fridge for at least an hour.
- Add cacao powder, almond extract, vanilla extract, and maple syrup or stevia. Blend in a Nutribullet or food processor until smooth and creamy.
- Layer pudding with Chocolate Coconut Almond Butter in bowls.

Sorry Rachel, I didn't measure the finished product, but it would be the total amount divided by 2. Since chia seeds expand, it's going to be more than 8 ounces (which is half the amount of liquid here).

I am new to chia seeds I made a pudding and my seeds didn't get plump ? Is it the seeds or did I do something wrong. I did leave it in the refrigerator over night

If they got soft and had a jelly-like consistency around them, then you are good to go. If they taste bitter, than the seeds have gone bad.

I used honey instead of stevia (I know, there's controversy over whether that's truly vegan or not), and it was absolutely delicious! And it's a very easy breakfast to make ahead of time.
