I have to make a confession. I created this granola as an excuse to eat more vegan chocolate.
And chocolaty it is. This homemade granola recipe has cacao powder baked into the rolled oats, then chocolate chips are added.
It also has three kinds of coconut to add a coconut flavor. It's an easy breakfast that can be made ahead of time.
Have it with some vegan chocolate milk for even more chocolaty goodness.
2020 has been my year of chocolate. I've made a bunch of desserts with chocolate including Vegan Black Bean Brownies, Vegan Peanut Butter Swirl Brownies, Vegan Chocolate Pudding, and Chocolate Peanut Butter Fudge.

- Rolled oats: I used certified gluten-free oats.
- Cacao powder (or cocoa powder): Adds chocolate flavor.
- Maple syrup: Adds sweetness. You could also use agave syrup, coconut sugar, or brown sugar.
- Coconut oil: I used unrefined coconut oil. It adds a coconut flavor. To coat the ingredients for baking.
- Vanilla extract: Enhances flavors.
- Salt: Enhances sweetness.
- Unsweetened coconut flakes (sliced coconut): You could also use more shredded coconut.
- Unsweetened shredded coconut: You could also use more coconut flakes.
- Dark chocolate chips: I used semi-sweet chocolate chips. You could also use dark chocolate baking chunks.

Step 1: Mix cacao powder, maple syrup, vanilla extract, melted coconut oil, and salt in a large bowl.
Step 2: Add rolled oats and mix well.
Step 3: Spread oats on a parchment-lined baking sheet in an even layer. Bake for 15 minutes, stir, and bake for 10 minutes.
Step 4: Add coconut flakes and shredded coconut.
Step 5: Bake for 5 minutes more.
Step 6: Let cool to room temperature and add chocolate chips.

Chocolate Coconut Granola
Ingredients
- 2 cups gluten free rolled oats
- ยผ cup cacao powder or cocoa powder
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil melted if solidified
- 1 teaspoon vanilla extract
- Salt
- ยฝ cup coconut flakes
- ยผ cup finely shredded coconut
- ยฝ cup semi-sweet chocolate chips
Instructions
- Preheat oven to 325ยฐF.
- Mix cacao powder, maple syrup, coconut oil, vanilla extract, and salt. Add rolled oats and mix well.
- Spread granola on a parchment lined baking sheet. Bake for 15 minutes at 325ยฐF. Stir and bake another 10 minutes.
- Add finely shredded coconut and coconut flakes. Bake another 5 minutes. Let cool.
- Add chocolate chips.
