    No-Bake 2 Ingredient Pecan Truffles

    These easy No-Bake 2 Ingredient Pecan Truffles are the perfect gift for the holiday season. These sweet treats are difficult to put down!

    These No-Bake 2 Ingredient Pecan Truffles are sweet and rich. They are perfect for a holiday get-together.

    After making 2 Ingredient Vegan Peanut Butter Fudge a while back, I've been obsessed with making desserts with sweetened condensed coconut milk. It's a fool-proof ingredient to use to sweeten a dessert.

    I've also used it in Vegan Pumpkin Spice Ice Cream, Creamy Almond Butter Cups, and Cold Brew Thai Iced Coffee, to name a few.

    Here, I mixed the sweetened condensed coconut milk with ground pecans, then rolled the mixture into balls, and rolled the balls in ground pecans mixed with salt. Yum!

    The salt brings out the sweetness of the vegan truffles and adds a nice contrast of flavors. They make a great gift for the holidays.

    🧾 Ingredients

    • Pecans: I used ground pecans, but really any type of nut will work.
    • Sweetened condensed coconut milk: Adds a sweet, rich flavor. You could also use sweetened condensed oat milk or homemade sweetened condensed coconut milk.
    • Salt: Enhances sweetness. I like to use sea salt. (Obviously, I didn't count salt as an ingredient.)

    🔪 Instructions

    Ground pecans in a food processor.

    Step 1: Place pecans in a food processor. Mix until finely ground. Reserve ¼ cup for rolling balls in.

    Step 2: Add sweetened condensed coconut milk.

    Step 3: Mix until well combined. Place in the freezer for about an hour.

    Step 4: Roll into balls and freeze if they start to melt.

    Step 5: Roll in the reserved ground pecans. Store in the freezer.

    What are vegan truffles made of?

    These vegan truffles are made with ground pecans and sweetened condensed coconut milk. Some of the other truffles I've made included chocolate chips and coconut milk, like my Chocolate Coffee Truffles recipe.

    Ingredients

    • 1 ½ cup pecans
    • ½ cup sweetened condensed coconut milk
    • Pinch salt

    Instructions

    • Place pecans in a food processor. Mix until finely ground. Reserve ½ cup.
    • Add sweetened condensed coconut milk and salt. Mix until well combined. Place in the freezer for 1 hour.
    • Roll mixture into balls. Freeze again if they melt.
    • Roll pecan balls in the reserved ground pecans. Store in the freezer for the best consistency.

    Notes

    These truffles will last for several months in the freezer.
