    Coconut Fat Bombs

    I made these vegan Coconut Fat Bombs because one, I am trying to get more coconut oil into my diet and two, I am currently on a low carb high-fat vegan eating plan, otherwise known as a vegan ketogenic diet.

    By eliminating grain from my diet, I have had no allergy symptoms this past Fall. Seasonal allergies are something that I have dealt with for the past seventeen years, since moving to Arizona.

    I will eventually add grain products back into my diet, but for now, I am feeling great and burning fat.

    These Coconut Fat Bombs are a great way to include more healthy fats into your diet. Before these vegan keto fat bombs, I added coconut oil to smoothies and vegan Bulletproof Coffee, and cooked with it.

    I would also eat a spoonful straight from the jar. I probably don't have to tell you that these taste much better than gulping down coconut oil straight!

    Coconut butter and coconut flakes add a wonderful crunchy texture to these dairy-free fat bombs. I have made fat bombs without both, and even though they were good, they didn't have the crunchy mouth-feel that I was looking for.

    These keto fat bombs will help you meet your daily fat intake while eating low-carb and sugar-free.

    🧾 Ingredients

    • Coconut butter: Adds fat and a creamy coconut flavor. You could also use homemade coconut butter or cashew butter.
    • Virgin coconut oil: Adds fat. It's one of the fat sources on a vegan keto diet. Softened to room temperature.
    • Shredded coconut: Adds a crunchy coconut flavor.
    • Liquid stevia: Adds sweetness. You could use another sugar-free sweetener.

    📖 Variations / Additions

    • Lemon zest and lemon juice for Lemon Coconut Fat Bombs
    • Lime zest and lime juice
    • Ginger
    • Strawberries, raspberries, blackberries, cherries or blueberries
    • Cacao powder or cocoa powder
    • Dark chocolate chips or sugar-free chocolate

    • Vanilla extract
    • Almond extract
    • Mint extract or peppermint extract
    • Matcha green tea powder
    • Spices: cinnamon, nutmeg, for some Spiced Fat Bombs, or allspice, pumpkin spice, chai spice

    🔪 Instructions

    Jar of coconut butter in a saucepan with sizzling water.

    Step 1: Melt coconut butter by placing the jar in a saucepan filled with water over low heat.

    Step 2: Add melted coconut butter, melted (or soft) coconut oil, finely shredded coconut, and stevia to a medium bowl. Whisk until all the lumps are gone.

    Step 3: Fill mini cupcake liners, an ice cube tray, or silicone molds with a tablespoonful each of the mixture.

    Step 4: Freeze for an hour. Store in an airtight container in the fridge or freezer.

    How to Melt Coconut Butter

    • Melt coconut butter by placing the jar in a saucepan filled with water over medium heat. Occasionally pull the jar out with oven mitts and stir it. If it's hard to stir, stick it back in the simmering water until it's ready.
    • Do NOT put the coconut butter in the microwave. It will cook unevenly and burn.
    • When it's easy to stir, spoon it into a measuring cup to measure out the amount you need.

    💭 Tips

    • The coconut oil CAN be heated in the microwave if it's solid, but the coconut butter will cook unevenly and burn.
    • Freeze the fat bombs and store them in the fridge or freezer.

    Ingredients

    • ½ cup coconut butter, melted
    • ½ cup coconut oil, melted
    • ¼ cup + 2 tablespoons finely shredded coconut
    • 12 drops stevia

    • Melt coconut butter by placing the jar in a saucepan filled with water over low heat.
    • Add all ingredients to a medium bowl. Whisk until all the lumps are gone.
    • With a tablespoon, fill mini cupcake liners or an ice cube tray, putting 1 tablespoonful in each. Freeze for 1 hour. Store in the fridge or freezer.

      I just made the coconut bombs. I love coconut but they have a strange taste to them. I had choc bombs before, so not sure if my pallet was expecting choc. Lol. Wonder if I should re melt them add coco. This is only my 2nd week so .....

        They do take getting used to. Before I had fat bombs I would eat coconut oil by the spoonful, so my palate was used to the taste. I also have a few chocolate fat bomb recipes you could check out, which might be better for starting out.

      I just tried to make these but I had a lot of oil in the bowl that was left it was like the ratio of oil and the coconut was way too much can you tell me what I did wrong? I am thinking that the coconut is not really supposed to be swimming and all the oil but just want to make sure.

        Did you try putting them in the fridge or freezer to let them set? As long as you followed the amounts and ingredients exactly the consistency will turn out. I have made this recipe many times, and I even made them into Lemon Coconut Fat Bombs. If you have never made fat bombs before, it may look a little strange seeing all that oil.

      I just made these for the first time. It made six ice cube (two TBLS) fat bombs. Wow are they good. Will make more this weekend.

      I buy Nutiva coconut butter from Amazon in a two pack and it's so good. I eat it out of the jar 🙂

        I use melted coconut butter (per instructions on jar), and melted coconut oil, then mix everything in a bowl. Sorry for the confusion! I just updated the instructions to say melted so that it is clearer. You really can't use coconut butter until it is melted because it is solid as a rock.

        I find the easiest way to melt the coconut butter is to put it in boiling water and keep an eye on. I stir it every so often until it is melted. I have tried using the microwave, but it burned in spots.

        Another reader asked for the macros - which I responded to above, but I do have to say that I'm not a nutritionist and don't feel comfortable providing it. I've found that nutritional calculators are not always accurate, and I don't want to mislead my readers or give false information. I have recently been counting carbs and found that two different brands of almond flour had different calories and carbs, so it’s a matter of doing the research yourself. I personally love My Fitness Pal.

        I buy mine from Sprouts, Whole Foods, or Amazon. Any natural food store should carry it.

          Just wanted to mention that you if you have a food processor, making coconut butter is as easy as throwing a bag of unsweetened coconut flakes in and pulsing until it becomes buttery. Love love these coconut fat bombs!!!
