Whether you want to add more coconut oil to your diet, or you are on a vegan keto diet, these Coconut Fat Bombs are for you!
I made these vegan Coconut Fat Bombs because one, I am trying to get more coconut oil into my diet and two, I am currently on a low carb high fat vegan diet, otherwise known as a vegan ketogenic diet.
By eliminating grain from my diet, I have had no allergy symptoms this past Fall. Seasonal allergies are something that I have dealt with for the past seventeen years, since moving to Arizona.
I will eventually add grain products back into my diet, but for now I am feeling great and burning fat.
You can see a bunch of my Keto Vegan Recipes in a round-up, or see all of the them on my Vegan Keto category page.
These Coconut Fat Bombs are an excellent way to include more coconut oil into your diet. Before these vegan keto fat bombs, I added coconut oil to smoothies, Vegan Bulletproof Coffee, and cooked with it.
I would also eat a spoonful straight from the jar. I probably don't have to tell you that these taste much better than gulping down coconut oil straight!
Coconut butter and coconut flakes add a wonderful crunchy texture to these dairy free fat bombs. I have made fat bombs without both, and even though they were good, they didn't have the crunchy mouth-feel that I was looking for.
If you are interested in more high fat low carb treats, try my Chocolate Low Carb Vegan Fudge or my Low Carb Vegan Almond Cookies. They both are indulgent and not overly sweet, so they make a perfect snack.

Instructions
- Melt coconut butter (see below for best way).
- Mix melted coconut butter, melted (or soft) coconut oil, finely shredded coconut, and stevia.
- Fill mini cupcake liners, an ice cube tray, or silicone molds with a tablespoonful each of mixture.
- Freeze for an hour. Store in the fridge.
How to Melt Coconut Butter
- Melt coconut butter by placing the jar in a saucepan filled with water over medium heat. Occasionally pull the jar out with oven mitts and stir it. If it's hard to stir, stick it back in the simmering water until it's ready.
- Do NOT put the coconut butter in the microwave. It will cook unevenly and burn.
- When it's easy to stir, spoon it into a measuring cup to measure out the amount you need.
Tips
- The coconut oil CAN be heated in the microwave if it's solid, but the coconut butter will cook unevenly and burn.
- Freeze the fat bombs and store in the fridge or freezer.
How Long Do They Last?
These vegan fat bombs will last about 1 week in the fridge, and several months in the freezer.

I just made the coconut bombs. I love coconut but they have a strange taste to them. I had choc bombs before, so not sure if my pallet was expecting choc. Lol. Wonder if I should re melt them add coco. This is only my 2nd week so .....
..
Willow Moon says
They do take getting used to. Before I had fat bombs I would eat coconut oil by the spoonful, so my palate was used to the taste. I also have a few chocolate fat bomb recipes you could check out, which might be better for starting out.
Shirley says
Is coconut butter and coconut oil the same?
Willow Moon says
No they are not. It's like the difference between peanut oil and peanut butter.
Brenda says
I just tried to make these but I had a lot of oil in the bowl that was left it was like the ratio of oil and the coconut was way too much can you tell me what I did wrong? I am thinking that the coconut is not really supposed to be swimming and all the oil but just want to make sure.
Willow Moon says
Did you try putting them in the fridge or freezer to let them set? As long as you followed the amounts and ingredients exactly the consistency will turn out. I have made this recipe many times, and I even made them into Lemon Coconut Fat Bombs. If you have never made fat bombs before, it may look a little strange seeing all that oil.

I just made these for the first time. It made six ice cube (two TBLS) fat bombs. Wow are they good. Will make more this weekend.
Thanks for sharing this delectable low carb keto recipe.
I buy Nutiva coconut butter from Amazon in a two pack and it's so good. I eat it out of the jar 🙂
Willow Moon says
The coconut butter I buy has to be melted first, otherwise I would probably eat it straight from the jar too!
Bronwyn Welch says
Do you do this in a pan??
Willow Moon says
I use melted coconut butter (per instructions on jar), and melted coconut oil, then mix everything in a bowl. Sorry for the confusion! I just updated the instructions to say melted so that it is clearer. You really can't use coconut butter until it is melted because it is solid as a rock.
Willow Moon says
I find the easiest way to melt the coconut butter is to put it in boiling water and keep an eye on. I stir it every so often until it is melted. I have tried using the microwave, but it burned in spots.
Amber says
Do you have any nutritional info breakdown per mini muffin cup?
Willow Moon says
Another reader asked for the macros - which I responded to above, but I do have to say that I'm not a nutritionist and don't feel comfortable providing it. I've found that nutritional calculators are not always accurate, and I don't want to mislead my readers or give false information. I have recently been counting carbs and found that two different brands of almond flour had different calories and carbs, so it’s a matter of doing the research yourself. I personally love My Fitness Pal.
Kelly says
I bet these would be good with toasted coconut flakes too!
Willow Moon says
Ooh, I bet they would! Good idea!
Carol says
Where do you buy coconut butter?
Willow Moon says
I buy mine from Sprouts, Whole Foods, or Amazon. Any natural food store should carry it.
Tiffany says
GNC or Vitamin shoppe also sells coconut butter. I found mine at GNC.
Barbara says
Just wanted to mention that you if you have a food processor, making coconut butter is as easy as throwing a bag of unsweetened coconut flakes in and pulsing until it becomes buttery. Love love these coconut fat bombs!!!
Peggy says
Do you use sweetened or unsweetened coconut flakes? They look and sound delicious!!
Willow Moon says
Thanks Peggy! I use unsweetened coconut flakes.
